I retired from the Navy in Jan of 2006 and now live north of Chicago, IL in Zion, IL. I used to smoke flounder quite abit when I was stationed in Texas. Now I have a Great Smokey Mountain Propane smoker and have done 3 turkeys and quite a bit of Lake Michigan Chinook and Coho Salmon. I would like to try a pork butt soon. Not sure to use a brine or a rub. Or which one of either to use. I don't want to try for Carolina style, more like Texas style.

Welcome flounderhead. Glad you joined us.
I suggest that you forgo injection for your first butt and simply rub it. Keeps it simpler and I am sure you will like the results. As far as Texas style pulled pork, I'm not sure there is such a thing. Gonna have to do a brisket for that.

Welcome! What Jim said on the butt. I too would just use a simple rub and go from there.
Might have to get some Salmon tips from ya...

Good to see you Flounder.
I've been doing butts for a while, and always get great results without injecting. Use a good rub, maybe a <gasp!> mustard slather first and then smoke the bad boy.

Welcome Flounder! You will see quite a few Chi-Town members here. I agree on the Butt, get a good rub and go from there. Butts are very forgiving and much easier than a turkey.

I agree about doing your first butt - that didn't come out right... - anyway, try a rub that tastes good and inject later. Butts are pretty forgiving.
