I can't believe that there is a forum like this!!! I learned how to smoke pork from the Cubans across the street and have been having fun since 1985! We are blessed to have a pork processing plant in town with fresh pork available anytime. We pretty much use charcol and wood (4' Brinkman) but are looking at a rottisserie (sp) smoker....anybody got any suggestions?? We are looking at a JR's out of Arkansas.......

Ladehoff 1 (or 2 beers).....ok, but just one more

Well, as far as Cuban smoking, they use alot of garlic (fresh, with cloves under the skin) and a secret wet marinade. I'm gonna take a case of beer and a bottle over, hope to get the make-up. Old time cuban is in a hole in the ground, whole pig, charcoal on bottom with some pecan chunks and fresh branches covering hole.....cook 18 hours and eat.....
