Here are a few pictures of the brisket I made Saturday night. I didn't have high expectations because of the poor fat cap, but it turned out excellent.

Thick smokering. If you liked the results, then that's what it's all about! My last 2 packers I trimmed the fat cap almost completely off.

It was a 6.5 pound packer with virtually no fat cap. I bought a case of brisket a few weeks ago and this little guy was in there.
This was my first frozen brisket, and I couldn't tell any difference from the fresh ones I usually cook with.
I ran the stoker with wireless updates e-mailed to my phone so I could work on the yard all day. Plan was for the smoker to run 225 until meat reached 160. After 6 hours it was at 154, so I foiled it anyways. Cranked up the heat a bit for an hour or so until 200 internal, and then I rested it for about 3 hours in a cooler.

Very nice looking. I get similar results cooking on my WSMs sideways.
