Well I learned something last Friday. Not all Japs are equal!!!! Made ABTs fill with the inside filling of a crab rangoon. (Make those all the time...) Well needless to say that the Japs that I bought at the local Mexican Groceria were a tad bit hotter than what were use too. So I was an unexpected surprise to get lit up. I will post the pics when I get them off the camera tonight. Yup the were HOT!

I have had that experience when buying japs from wally-world.
One time they are the mellowest batch, then the next are hotter than all get-out!
Probably makes a difference in where they were grown.

They might have been grown near habaneros.
Some batches are the TAMU jalapenos. No heat. I sometimes get a mix in the same batch.

I am thinking (Scary mod) that since they were bought from a Mexican Groceria and not local grocery chain or Wally World. These may have been grown in maybe a drier area like New Mexico. Drier climates produce hotter peppers. IMHO

A general rule that I've been given is to look for some cracks in the skin, it's an indication of stress which will produce heat. More often, than not it's accurate.

Last couple batches of japalenos I got have been hotter. So This time I also picked up the smallest Pablanos I could find (look like japs on roids or Texas sized) for those with a more delicate palete! Takes a bunch of cheese to stuff em and 2 slices of bacon to wrap em. Asked one of my boys how they tasted in comparision to the japs and he said he didn't know since all he tasted with the jap was hot!
