Setting up for vending again this weekend. Spares, pulled pork, brisket, chicken, cheddar/bacon tater salad, and slaw. There will be live radio feed at the store I am setting up at and I am able to get on the air for a couple spots. Have some pics from last couple weeks. Just haven't had time to post them yet. Taking Sunday off since it's been really slow last 2 Sundays, so I'll post pics then.

i'm doing briskit, lamb, venision, & 2 rack ribs to keep wife & kids happy. Saturday will be hot & sunny here in NY so maybe some tuna steaks & maybe some lobsters (but it will be first time cooking them).

I'v got an 8.2 lb pork butt going on Saturday night for an overnight...my first fatty (mushroom and cheese) and some ABT's going on Sunday.

Flippin' burgers today for 60 people at work...farkin' weather is nuts...rain, wind, cold...had to use 3 guy wires on the pop up...oh well...it could be worse...I COULD be inside working! :twisted: Supposed to go to an outdoor CSN concert tonight at the winery...not lookin' good...we'll probably stay home and burn a couple of steaks...or pizza!

I have my daughters christening party :icon_clown on Sunday so I'm doing a good size cook.
15# Briskey, 8 racks of spares, 60 ABTS (Rick's tropical "boat" mod). My wife is making a couple of trays of Cajun Lasagna.

Unfortunately...nothing; no Q! The 30mph+ winds still refuse to stop down here. I've never seen a May and June like this before. :mad: If it does lighten up buy some miracle, I'll throw on butt I think.

No pix yet, because I'm not cooking until Sunday, but I'll be working with fish this time. I'm cooking salmon as a main course, a smoked salmon dip, a bunch of bacon-wrapped shrimp, and I might cheat and get some bacon-wrapped scallops too. I'm feeding 20 people. Pix later!

This weekend should be a lot of first for me tonight I am trying to smoke a pork roast. Then on Sunday I hope to do my first rack of ribs

We're cooking at a non sanctioned 1 day contest at a winery in the foothills of California. We'll be cooking four racks of babybacks, 2 butts and a brisket.

Did some shoulder ribs and a Brisket last night and just put on a case of butt's for a graduation this evening. Also so put together some scewers for dinner tonight.

JD bet you're having pizza tonight! I burned (literally) a couple for the boys last night and they didn't say one word, kept looking at me funny while they were eating it. Thought I was gonna die trying not to laugh. Guess they were just plain hungry!

Made some chili today. Used some leftover beef ribs I had from last night. Fantastic...they just showed up in my fridge!
Looking forward to some spares for a late night snack. Just pulled out some links outta the smoker after hittin the links for a few holes. Anyone else Q'n and Golf'n today?

Ok, here it is start to finish. One Pork Butt Roast, One Picnic Roast, and One Rack of Loin Back Ribs. Cooked on Smoke Hollow Verticle gasser, I used Hickory wood with apple juice in the water pan. Put them on at about 9:50 am and finished evrything up at 6:00 pm. Temp held real stady at about 235 the whole time with small adjustments made only a few times.
Made chocolate raspberry ice cream for some good friends tonight. They cooked everything else. Ate food stuff all day.

Did chicken different rub on half and half wet half dry. Couple racks of SL's did half wet and half dry and half 2-1-1/2 and half straight no foil. No difference in the chicken. Everyone in my house liked the straight dry better. Waiting to hear from my Q partner as to what he liked better. Did ABT's but they were long gone before I took the photo. Didn't core them out as much so they were about warm enough for me, my wife and Q partner chugged the milk! So, I'm thinking the chicken looks too dark, opinions? Of course I thought the ribs looked burnt too but they weren't.

Was going to do some butts over a brisket, but that never happened.
Wife wanted a meatloaf, but it was too farking hot to run the oven. What's a guy to do? It wasn't too hot to fire up the WSM of course!
Loaded up the WSM with Kingsford. Lit a full chimney of K, put a bunch of hickory in the WSM, got it to around 300. Put the meatloaf on, and threw on a pork tenderloin I got at the store. When I lit the coals in the chimney, I put the chimney on the grate of my weber kettle. Came back after I put the meat on, noticed the coals in the kettle left over from my last cook had ignited and were ripping hot. Took that as a sign. I threw a few chunks of hickory in to get a nice rip-roaring hot fire, and reverse-seared the pork loin on the flames to finish it off. It was moist, juicy and tasted awesome.

Ended up vac-sealing the rest of the loin, will have it for dinner some other night. There was quite a bit of meat there.
