This turned out better than any I have done. I rubbed it with some Texas BBQ Brisket rub and put her in the smoke for 22 hours. I then placed it in a cooler for 19 hours triple-wrapped in foil. I sliced it at noon for a Memorial Day gathering at a friend's house. It was still hot to the touch.
The sliced, chopped and burnt ends were all gone in 15 minutes.
