The Backyard All-Stars will be there. Jim, Kelly and I are gonna show up as early as possible. Even though I moved, I'm still less than 15 minutes away. I can't wait (to get our asses kicked since we haven't cooked anything decent since October)! :-D

Guy, I think I worked it out today. I called our junkie friend from sayville who said he will go to the contest on my behalf for a "carnie style birthday celebration". ;)

haven't tried our new techinques with chicken at a comp yet,, Get a real good eye opening lesson last year at Dover from a friend that was cooking with us. I do know I can take a flat of thighs and make each piece dang near identical. but as I said,, haven't tried it myself in a comp yet..

Hey Barbeque Competitors

We are less then two weeks away from the BBQ on the Farm and I can't wait. Let me go over everything with you;

You can come in anytime Friday before 6 pm. Between 6pm and 10 pm the event will be going on. If you want to come in between these times, you need to park, come in and get me. I will see if we can sneak you in. If not, you will have to wait till after the crowd leaves. They are doing a beer fest on Friday night and are expecting a lot of people, so we need to work around them.

We will be having a cooks meeting on Friday at 5:30 for the Iron Chef competitors.This is when you will be getting your three main ingredients [meat,vegetable,and starch]. You will then have till 9 pm to make your entre'. You can add anything you wish as long as you use the three ingredients that you are given. You will need six servings and you can plate it anyway you like. Any team wishing to enter can still do so, just contact me as soon as possible, so I have enough.

Saturday: check in and meat inspections will start at 7 am for both KCBS and Backyard. We will have four people doing this, so it should go quickly. I will need judges for the backyard contest. If you are avaliable and want to judge, let me know when you get there and I will sign you up. We will be having a mandatory cooks meeting at 5 pm for the KCBS teams.

Since the dessert catagory was so much fun last year, we decided to do it again. This year there will be a little twist. Since it is also a strawberry festival, the farm will be giving every contestant a quart of strawberries to use in your dessert. So put on your thinking caps and let's see what you can come up with. Like the iron chef, you can plate it up any way you like. Just remember, if you use a container that you want back, you will need to come back after the judges are finished to retrieve your container.

Sunday morning breakfast sponsored by MABA will be at Smoken Dudes site from 7am till 9am. The coffee is being sponsored by Starbucks
The KCBS catagories are the normal schedule; Chicken 12:00 Ribs 12:30 Pork 1:00 Brisket 1:30

There is a $6.00 entry fee for adults and a $3.00 for kids and kids under three are free. Each team will be given a limit amount of wrist bands for the team members and their families to enter.

The farm is really trying to make this a premere contest and I think they are doing a great job; This year alone they have put in a petting zoo and gem mine for the kids.Also the kids can take a wagon ride to the strawberry patch where they can pick berries. They also have the pig races and a beer fest Not bad for the second year .The entertainment this year is outstanding. I think you will enjoy it.

I love meeting other brethren. Problem is at a contest sometimed we are to busy and even I am guilty of not stopping in and saying hi to a team that i recognize. Or out of courtesy because somebody might look busy. I propose we set a specific meet & greet drink/toast time for Saturday night. This way we can all meet no excuses. I will even bring the pack of "hello my name is" stickers if makes it easier.

I'll trade some cherry for apple if someone does not want plum. Then I will trade Sled the apple for the plum on the BWEX (Brethren Wood Exchange)!!!

All the supermarkets in the area carry it. Mostly Hatfield and Habberset brands. Closest stores to the contest site would the Giant in Newtown, McCaffrey's in Yardley and one other (might be a Giant also) in the same shopping center as McCaffrey's. All 3 are just a few minutes away.

Looking forward to Yardly. That was our first Comp ever. Did the Back Yard Comp. last year. Unfortuneately came in dead last. Hopefully we will not repeat that this year. Had a great time, and as long as we have fun and improve our scores it is a success. Scrapple is the best. Will be there Friday afternoon for the Iron Chef and will be doing the main Comp Sat into Sun. Looking forward to seeing/meeting everyone

I have a great corn bread recipe (and 3 packs of extra cornmeal) and was wondering what the interest level would be in having cast iron corn bread with with butter at the breakfast?

I also have some killer sweet and spicy jellies!

If there is interest, would someone be able to handle the eggs as I won't have enough pans to cook the eggs.

If not, I will stick with the eggs.

I love meeting other brethren. Problem is at a contest sometimed we are to busy and even I am guilty of not stopping in and saying hi to a team that i recognize. Or out of courtesy because somebody might look busy. I propose we set a specific meet & greet drink/toast time for Saturday night. This way we can all meet no excuses. I will even bring the pack of "hello my name is" stickers if makes it easier.

So is 7pm at Phil's (BBQ Brethren team) site good for everyone?

If the scrapple could be cooked separately from anything else we would be thankful. Gluten-free issue for MrsBigBarry - wheat flour in most brands.

I can still pick you up scrapple if you want. We are not staying over night, friday night, since we live close but we will be there around 1p on Friday and stay until the judging of the iron Chef, then return in the mid afternoon saturday.

Basically all that babbling was asking, do you still want me to pick up up scrapple? If so not a problem at all, don't mind helping brothers out.

Just got home from the event, was there judging,, didn't stick around for the awards, so I'm anxiously awaiting to hear how everyone did,, I apologzie for not getting around to meet everyone, we got there at a bad time on saturday, most everyone was working on their desert category, plus with it being as hot as it was, we didn't stick around too awful long, There was a nice little bar next to the hotel we were staying at calling my name..lol... Got to eat some really good que today while judging, had a couple ribs I just did not care for at all, but all in all,, everything else I had was pretty good. So I hope the brethren gave a good showing,, and hopefully we'll catch up at the next one..

Just got home and unpacked. First of all I have to say Holly Chit was it fraking hot. I think I lost 10lbs in sweat, as I am sure you all did. Now that I got that out of the way. We got 31st overall out of 56. We thought we were going to do a little better in chicken and ribs than we did, but we are pretty happy with the overall. This was only my 3rd comp, so I am really excited. Can't wait til Berks. It was great meeting some of you, Butthead, WannabQueen, and Two fat pollocks. I was right near Sled but everytime I went to say hi to you, something happened either with my team, or you were not at your site. I meant to come over and say hi to Phil, but never got over there. If I missed others I am sorry, hopefully I will be able to see some of you at future comps.

Very hot, but had lots of fun. We got there late Saturday so instead of being where most of the teams were, we were close to the judge's tent, with the backyard competitors. Lots of room and easy getting out. Can't wait until next year (hopefully it will be cooler!).

What contest issues did you have? I'm assuming you're referring to the cramped conditions in the main competitor area and the porta-potty issues. I was disappointed in how they crammed teams in like that. Much better setup last year.

Sorry I didn't get a chance to talk to you more -- once I got the truck loaded, I just had to sit down. The heat was killer.

It was brutally hot. I had some severe cramping and would go 15 hours without peeing. Got pretty dehydrated. Other than that had a great time. We- Back Porch BBQ did pretty good. Pleased with the overall results. I was glad to meet a lot of people that I see on the forum. Hope to see more of you at future Comps. Congrats to all who got a call.

family tragedy for teammate, oppressive heat, cramped accommodations and lack of sanitation facilities are some of the things that we would gladly have done without.
other than that it was great to get out to a comp again. good to see all of the people that I know and meet some new faces.
I had a blast cooking with Poobah and Vinny. Just to let everyone know there were more than the names that you see here on our team. Jerry and James are as much a part of that team as anyone and I haven't seen many 2 father/son pairing that are that strong.
cant wait to do it again............

Hey everybody, Congratulations to those who did well. We didn't and we're not too sure why. I thought everything was pretty good and not 40's results as we received.
That heat was unbelievable, wasn’t it? We were lucky to be across from a tree that provided a little shade, so we set up a baby pool to put our feet in and we were able to get the breeze from the open field.

I hate to complain, but there were some things that I was upset with that I think could have been avoided. I couldn't believe they were telling us at, what was it, 10 am? on Sunday that we had to go to the store to use the one working bathroom on the whole farm! And, they didn't have arrangements for our cars to be parked close by so we could DRIVE up to the one bathroom in the place. Where our site was, there were no close bathrooms. Thank God we didn't have to use the bathrooms during turn ins.

We did get to meet some nice people, although I'm disappointed that it was too hot to walk around and mingle (plus, the puppy wasn't up to walking around in the heat and I wanted to keep him comfortable). I really wanted to stop and say hi to those I talk to on here. We didn’t have our banner up until Sunday, so it was easy to miss us. One identifier though was our puppy, the Australian Cattle Dog. So many people stopped to pet him.:-P

Did much better than I thought I would! 25th of 57 teams. I think it's our best overall.

Brisket was terrible - 17th!!!

Ribs were way overdone. Barely got 8 ribs from 3 racks - 17th!!!

Hi Eric,

I'm not looking to bash them at all. Here's what could have been better.

- They made us load in width wise. We could not pull out until all the other teams in the same row pulled out first.

- ground water floods got worse as the days passed. We asked for crushed rock but they said they could not get more. We had to resort to personally carrying over empty pallets to keep on our site to walk on after several requests for help did not get anywhere.

- not having water refilled in the handwash station was pretty lame. Porta potty issue was bad too.

- having awards called for a 4 PM and not starting for more than a half hour later was pretty bad too given all the heat. Could have spend time packing and told the teams awards would be delayed a bit.

Again, not looking to bash and turn this into the infamous Grill Kings bashing of a few years ago.

Hopefully they can correct all the issues. If it weren't for all the Brethren there I'm not sure if I'd go back again. Last year was better IMO.

I was there for some of the placing of teams. I was a bit amazed at their logic. Think of a large tetris board. The end we were, if I had stayed, was soft early on and everyone was advised to drain their grey water. this is a huge farm, seems they could have spread out a little bit more. Scott

Aw, I remember seeing a little boy with curly blonde hair - what a cutie. Next time we'll have to find a way to put our banner up sooner so people might recognize the name a little. The ground was too rocky so we couldn't get the rebar that we use for the frame in the ground. We finally hung it along the side of the e-z up.

I'll tell you, that little pool being in the shade stayed pretty cold and it helped to cool me off pretty good.

He's a little shy though, and there was an awful lot going on so he didn't know what to make of it at first. When we got 2nd in chicken, his mom yelled with excitement which scared him and he cried. I love him to death though and I could talk about him all day.

Shawn from Stumpy Coals is a good guy. We met him at our very first comp 2 years ago. He's got real enthusiasm for bbq and really wants to do well. Glad to see he got some better results compared to last year.

I know that they want a lot of space for the mpublic events but we need some too. We also need areas to dump the dirty water, and more ash and grease cans.

I didn't think the toilet situation was to bad, the short walk even in heat was ok and most of us need the exercise:rolleyes: The space issue is something to be concerned about. They had plenty of room to make at least 20 feet between rows. What if somebody had a heat stroke or other medical emergency? No way could an ambulance fit down any of those aisles. A safety hazard as well. What if i had a family emergency or whatever? I thought it was a great event (heat aside) and I will return next year.

I agree that there were some significant issues that could easily be addressed for next time.

Toilets/wash stations. Inexcusable. All they had to do was fill the sink tanks with fresh water!!
Crowding/departing issues - agree.
Water - early shutoff was bad. Placement also was bad. They should have had more posts at the other end of the rows.
Gray water - needed to have containers and spread out for easy access.
Ash - overflowed and started a fire. Also, near the diesel!
Awards - really bad to delay with the heat.
Gravel - needed a couple of tons more with the bad drainage and mud.
Ice - they ran out twice. Not good.
Parking - would be nice to be able to park closer in the other empty fields.
Dust/tractor rides - that tractor was driving by all day right next to our food prep! Wet down the road or move the route.

I will be submitting a feedback form to help them improve the event.

This was our last BBQ on the Farm. Not many of things that were wrong last year were taken care of this year. Thats why I was hesitant to come this year but the wife talked me into it. The bright spot of the weekend was having my nephew compete and do well (he even beat us).

Thanks! This was only our 3rd KCBS contest and we were thrilled with the results. 7th in brisket, 2nd in chicken and 3rd overall was way better than we expected. I'm glad we'll have something to remember about this contest besides the heat.

This was our last BBQ on the Farm. Not many of things that were wrong last year were taken care of this year. Thats why I was hesitant to come this year but the wife talked me into it. The bright spot of the weekend was having my nephew compete and do well (he even beat us).
I am willing to bet that we can talk you in to doing it aGAIN NEXT YEAR:biggrin:

I hope you change your mind between now and then too Guy. I think it could be a great event with a little work. I wouldn't miss it. It's my home contest and I hope it'll become a tradition for a lot of people in the area. I just wish the pay out money made it down to 3rd overall. That would've been sweet. :-D

I may be persuaded if they don't pack us in like cattle, put the potra-chitters a little closer to the cookers and pump them each day, give us decent water and electricity and they make it a Friday-Saturday event.

I agree, Friday, Saturday event would be much better. I was not thrilled when I got home and had to unpack the car, and search through all of the stuff. It makes it tough to get home late evening Sunday and have to go to work on Monday. I at least work nights so I still got a decent amount of sleep, but I am in the minority as far as that goes. We'll see, being more spread out would be nice too.

We definitely like the Sat. - Sun. events better. We have to work on Fridays. It is tough to get home on Sunday evening and unpack, but we just have an area where we unpack everything and throughout the week we put stuff where it needs to go. We probably won't be able to do this one if it is a Friday - Saturday event.

Fridays would be rough for us as well since this is my hubby's busy season, Sat/Sun isn't easy but we do the same dump it in a spot and go through it as the week progresses, about halfway through now...lol

I prefer the Fri- Sat. It means I have to use a vacation day but it gives me Sun to rest and I can get my team to help with the clean up. They did a great time with it this time. Coyuld not have done it without them as I felt wasted

No sauce on the chicken and pork ? Also, might want to stop using that silicone brush on the brisket slices... It makes visible streak marks. Also... Looks like you're overtrimming the fat on the brisket fat cap..

PS - Did anyone else provide any feedback to Tom Christine per his e-mail request ? I sent a cordial response (not a rant) that noted several issues we experienced as well as several improvement opportunities for future consideration. I have not even received an acknowledgement and it's been over two weeks.
