View Full Version : Oh Well!!
Loaded up the UDS with a couple of 8# butts and the WSM with an 11# & 12# briskets last night about 11:00 PM. Cooking for a friend who is throwing a suprise 40th Bday party for his wife today. I went to sleep comfortably knowing that the two machines would hum through the night at around 225* around midnight. Woke up the this morning around 6:30 feeling refreshed and ready to get the day started. Looked out the kitchen window and there was the UDS humming away with sweet blue wafting through the air. I look over at the WSM and low and behold no smoke! I quickly turn my attention to the Nu-Temp and it says the WSM is at 65*!!! WTF! Outsid temp is 42* and then I notice the access door on the WSM is laying on the ground with nothing but ash in the fire ring!!!!!!!!!!!!! The briskets do not appear to be ruined, not even burnt, nice bark on the bottom one, while the top brisket looked as if it had been cooking for 4 hours. All I can figure is that critter's nose got the best of him and wanted to check it out:biggrin: then was scared away by the fire. Reloaded the WSM with K and Sweet Cherry wood and she is chugging away at 245 as I type. I guess I'll serve the pulled pork, ribs, and chicken at dinner time then pull out the briskets for a late night snack so people can sober up!
Look at the bright side Neil........more brisket for you!

Neil, think about trying to fast track the brisket....kick the heat up to 275*-300* range and cook it like you normally do. When you wrap it make sure to put some beef broth and such in there to keepp er' moist.

Sounds like a racoon. I was camping once and woke up to the sound of someone rustling thru my cooler. Scared almost to death I peaked outside expecting to see a bear. Farkin racoon had a cheeseball in one hand and a Budweiser in the other! Those little farkers are smart.

Hard to open a twistoff with a cheeseball in your hand! Hey Neil, did you spot the critter wandering around with a big red nose yet?
I cranked the heat up on the briskets a bit to 275* then wrapped them when they hit 160*. At 180* the probe slid into the thickest part of the flat like a hot knife througs soft butter.:biggrin: Those two might have been the best briskets I've ever cooked. I'm going to have to find that raccoon and offer him a piece to come back next time I do an overnight smoke!:biggrin::biggrin::biggrin:

That happen to me Fri night while cooking butts over slept smoker got down to 100F. Butts turn out good.

Should set that cat outside( Fred Flintstone Mod ) to keep an eye on things. Next time your"e in the area call, I have a box of wood from the South for you.
I bought a roll of 4 inch high temp aluminum tape and sealed off the door for good.

That’s kinda funny you brought this up. When I did my first overnight cook on my WSM I was worried about the same thing happening to me. I’ve got a few critters lurking around my yard at night too.
I felt kind of silly asking about it, or it’s happened to anyone else.
I guess you can’t blame a critter for liking the smell of good Q.
Did you check the brisket for bit marks? lol

The first thing I did after taking the cooking chamber off was check for bite marks and paw prints.

Lets see now, I built my first UDS last year, won my second UDS a couple of weeks ago, and built two more last weekend. Yep, I like em allright:biggrin:
All kidding aside, the UDS is a WSM on steroids. They are both excellent smoking machines.
