Around here, we say "Peecan"

"Pacawn" is a tree/nut/pie. A "Peecan" is what a trucker pees in.

There is no "pee" in a pecan pie.

In Alabama we say Pacawn.

But anyway you say it, that is some fine eating!!!!!!!!!!!!!!!!
So mant calores in that stuff you could catch it on fire!

Rick - Are you using depth of field control or a tilt and shift lens to control what's in and out of focus. Your pictures are always of the highest quality

well, thanks, mon!
but it's nothing special like that. just a tripod and a long exposure on auto mode. 1/3 second shutter at f/4 with the nikkor 18-135 lens. focal length was at 26 mm and iso 400. i cropped that one a bit and gave it a little saturation boost in photoshop...............

man, that jerk rub was hot, hot, hot last night... i hope it cools down a bit

Kinda a minor cook here as this is an experiment with the UDS.Its around 18 degrees here.It took about 45 minutes for the drum to get up to 300 degrees. And it appears to be holding that temp nicely.I have the ball valve wide open and 1 of the pipe plugs out on the bottom vents.I have about 1/2 basket of Rancher in with cherry wood.Food is a dozen chicken thighs, some with plowboys and a couple with Head country. Also a meatloaf of about 3# and a stuffed fatty. My first cook with the rancher which was given to me to try by the infamous Harbormaster.:-D

Had friends down from St. Louis...watched the Tigers get thrown around by their tail. Da*n those Huskers are tough. Anyway, they are used to good Q so fired the UDS...5 lb Butt (pulled), 2 fatties (maple and sage), couple slabs of BB's. WOW!!! Had to cooler the ribs in foil so they got overdone but still very taskeee! Sorry, no pics as when they got here they were ready to eat...and nothing was left.
