View Full Version : Beef Ribs on UDS Questions
Doing these ribs Sat. Plan cook @ 220 deg or so using red wine vinegar an EVOO to hold Pappy's Rub. Foil 1 Hr with Beer at end.
1 Aprox how long to smoke before foiling?
2 bone up or down?
3 Flip or not flip?
4 any other suggestions!
any and all ideas welcome never done beef ribs before or on the UDS:eek:

I've only done Dinosaur bones on the drum. Salt and pepper, bone side up, turn @90 minutes for a 2-2.5+ hour cook. I was up @ 250*+. Didn't foil, they were crispy outside, tender between the bones. Pull the membrane if those ribs have it. Never done short ribs yet, those look nice and meaty! Whatever you do take some pics!

Yours look way meatier than mine...I would do them more if they had more meat!
Wow keale those look great!! Can' t wait till Sat to do those bad boys:twisted: I thought they woul take longer to cook was plannning on 4 to 6 hrs before foiling. As allways a work in progress. Pics to come.

Here are Pics for 2 hrs into cook and 5 hrs in to cook. Cold north wind today+ slow start on temps will take to 7:30 PM pacific time then foil for 45 min to 1 hr. Its all good but starting to get hungry for Flintstone Ribs:icon_bigsmil:biggrin::cool::eek:

Final results Fred Flintstone Ribs. Did not foil as planned, cookedout to 7 hrs results were good not fantastic but good ribs leaned out well in the last hour . Was able to get temps up for the last hour so I did not foil. Thesee were some very meaty ribs and not to fat. All in all not too bad for the first time. Ya N8man they do smell good:biggrin: This will be on the menu more often:icon_bigsmil Smoke on brethern smoke on:biggrin:

Those look very good! Nothing wrong with that! Makes me want to do them again, can you ship some of those MEATY ones here? LOL! More bone than meat over here!

Chillimacdaddy no glaze at all. I did run the temp up for the last hour to 220 deg at the grate. When I prepped them they were brushed with a redwine vinegar and EVOO.:icon_bigsmil
