For my wifes birthday, we did a THANKSGIVING Dinner,
did a 12# Turkey Roast, Marinated in Ron's Brine, good stuff!

Rubbed with RiverCity Smoke Rub, Turkey was very juicy, great smoke flavor, smoked with apple chunks, (thanks Jim!)

This was after 3 hrs...

6 hr mark

http://i172.photobucket.com/albums/w40/uilanike/IMG_1099.jpg
Verdict? Very good, very moist, better than oven, didn't need gravy!

Spiral ham w/ Apple Butter
http://i172.photobucket.com/albums/w40/uilanike/IMG_1101.jpg
Was not dry, but could have been more moist(does
that make sense?)Good smoke flavor...
A little salty, are these hams brined? I thought it would
a little sweeter w/ the apples butter.
Everyone enjoyed, Served Mashed Potatoes, Homemade stuffing,(paula deen mod.), Spinach salad, Toss salad.
We had Pumpkin pie ala mode, and Birthday cake

Roy, I like those kind of turkeys. They have no bones and you get a bit of both white and dark in each slice. My favorite for sammies.
Where did you pick it up at and what brand is that? Coooking time? temp? You brined? Inject too or? Many, many questions.
BTW did the package show up and what smoking woods can you not get there and what would you like to try or use.
Hmm....I should maybe just call.

that looks great!! I have never done a spiral cut ham. I am wondering if that may have something to do with the dryness?

I tried a spiral sliced ham once. Since it was a prime candidate for losing moisture, I smoked it while it was sitting cut end down in an aluminum pan. That way the juices were drawn back up into the ham . . . but it still turned out . . . well, not dry, but I'd say, well . . . kinda grainy, if that makes any sense.
Subsequent whole, bone-in, non-sliced hams have turned out AWESOME.
Anyway - nice job and Happy B-Day to your wifey, keale!

EXACTLY! I did it in a pan also, definitely will do a whole ham next time...
It still tasted good. Next time I will tent the ham for the whole smoke...The turkey was a winner...

Looks real good. Sounds like spiral sliced is not the best choice for smoking. Good to know.

Way to go man, looks really good. That kind of Q will put a smile on people's face any time of the year. I did a couple of spiral hams in the spring, used Jack Daniels sauce to baste and they came out yummy! Good job.
