Who thinks those canisters help/speed up marinading? I use 2.5 gallon buckets that I get from Costco when I season my meat. They fit in the fridge real nice. They have a nice seal in the lid. I have been thinking of putting a fitting in the top of one and see if it will hold a vacuum.

You talking about the Foodsaver Marinators? Yeah! I think they work great, I wish they made a larger one.

That is what I'm talking about. If consensus is that it works I might try a 2.5 gallon.

This is just my theory. The vacuum environment opens the pores in the food and allows the marinade to migrate into the food. For a very graphic example, put a marshmallow in
a clear vacuum canister and apply vacuum. That marshmallow will expand to about 3 times it's original size, and consequently open the pores. Again, I may be full of bologna, but that's how I see it.
