Lately, I have been having problems with spare ribs. Either, they have shiners, not meating enough or ribs bones curve to much. So my question to you is: What brand of spare ribs (cut to St. Louis) do you use for comps?

Below are a few brands I have used:

Smiths
IBP
Seaboard

Am I just going to have make the best of what I got? Anybody know of a brand that is nice and meaty?

I normally get IBP from Sams.

Better than those 5# racks from Krogers or Meijers.
Them are some ribs from some big old hogs for sure.

I'm with Sled on this one, at least for my own use. I usually pick up Smithfields in the local King Kullen on sale for $1.99. For comps, I've got a meat supplier that I usually buy from.

I too get IBP from Sam's. I always buy spares by the case there, three tripple packs per case usually at around $1.55/lb.

We have been struggling with this also. A couple of years ago we were buying swift at costco but we got tired of how big they are. They tend to have that loin flap across the meat side of the ribs which make them pretty thick. After that we tried almost every other brand and while they were smaller we still had shinners and curved bones. I think I might look at costco again because the thicker ribs are a little more forgiving.

I usually get mind from costco, spend a good amount of time looking through all of them to find a package I like. Problem with 3 in a pack is you might get 2 slabs that are a good size and then one monster slab that weights 3-4 lbs.

Curly's for sure. I've tried Chicago Meat Company babybacks and St. Louis style. The one's I got were 2# slabs. Very consistent. Not overly meaty, but they are exactly what you get at most restaurants.
