Mr. Meat Smoker ecb(RIP) has been recycled by one of the best in the business.

Sometimes......guy like me looks at a project and says..."Hey! I can do dat!" Then reality sits in and you realize your in over your farken head. Thats when you need to call in the experts. Sometimes, they're in the yellow pages, and sometimes if your lucky like me/us they're apart of the Brethren.

Theres this guy.....they call him Norco, but he's really like a dancing-McGyver-with a wallet stuffed full of rain checks or somethin. When da chit gets too thick, and you cain't get yer project finished, you bust him out of the glass and give him carte blanche to get it done.

I'm farkin speechless.......and don't know how to thank you...

It's in the truck out in the parking lot. Buddies at work have tasted the fruit of the UDS. Hope it don't get Jacked! El Segundo is a rough neighborhood. Maybe I can bribe the guards to keep an eye on it for a little snack next week (wimpy mod, gladly pay you tuesday for some surveillance today).:biggrin:

So you used the ECB to make the charcoal ring on the fire pan? I got an old one of them in the back yard doing nothing. What did you use fo the ash catcher? is that part of the ECB as well?

I used ECB charcoal pan, took grills one on top of other 90 deg. apart. I used bolts and washers to stand off bowl. I took ECB ring cut 6-7" section off, split rolled over itself to form smaller ring and tack welded. You should hear me describe how to tie shoes :biggrin:. I will ask Fin to post pics.

Dude, I promise they're coming. Gotta get that USC game out of the way tomorrow.
I cleaned her up something good. Sprinkled a little water on the inside, then coated with oxy-clean to sit for about 3 hours. Chit came clean with the brillo pads Norco left inside it. I smell nothin at all.

Heres a UDS question: I've been cookin about 20 pounds of pork butts in my offset all day for the game tomorrow. Can I use the fat/renderings that were caught in my drip pan to season my new "Phoenix" UDS?

Britney's kids, under Norco's expert tutilage will learn life's most important lessons:

1. The plasma cutter can be mans best friend. Can also be free w/magazine subscription.
2. Never get caught with the principals daughter. The principal hates that.
3. Always make sure to collect rain checks when food store has no meat listed in ads.
4. Never fear the dumpster. People are for the most part stupid.
5. Diving in a dumpster is not the same as diving in a pool, nor is it a crime.
6. Jello shots can make Mista look like a pretty boy.
7. Jello shots can last in the freezer for many months.

Yeap, we sure did, and it was about time. We've been overrated.
Gotta hand it to Stanford, they showed up ready to play football today. Sucks for us, but hopefully Pete can get us to re-group.

Great tailgate today! Best brisket I ever made came off that WSM. I used no thermometers or meat probes. We also did some pheasants & sausage, in addition the 20 pounds of butts I cooked yesterday. No shortage of vodka either. Home made beans and coleslaw. All of it was gone. Not a scrap left.

Damn it was good. I still wanna forget this day though....
