I think things like side dishes/anything but/beans/desserts/sauces are pretty much governed at each event by the contest organizers. There's not a set list of rules but guidelines should be covered at the cook's meeting. Maybe somebody else can chime in on this.

I know when I've judged them in the past at a KCBS event, Appearance and Taste are judged just like the meats but Tenderness is a ranking. Your favorite gets a 9, your 2nd favorite gets an 8, and so on down the line.

BTW---"Side Dishes" is not a normal comp entry;
Are you asking about side dishes for every day cooking?

Hey Kung Fu, I can't tell you much but I can tell you we did wings in Herman last week for the first time. I ask the event organizer what was expected and he told me KCBS rules. So that's what we did, took 5th in wings. I don't think they keep to the presentation part of it though for sides, I think you can do anything you want to with it as long as it's identifiable and eatable.
