Sorry couldn't resist! First of all I need to learn how to build a proper
fire!:mad:
and learn how to grill!:oops: It took me way to long!
Marinated a chuckie(I'm cheap, and this was 3.99/lb! too much!)in this Weber sauce,(here the pic kev! LOL!) Darn good stuff! You mix it w/ vinegar, olive oil, and water. Did some pork chop loin, in Wild willy's rub. A little well done, but good. I wish I took pics of the grill, but was babysitting the fire too much.
Dang it pics came out too big again!

Oh yeah, like Jayhawk says you need the chimney, the charcoal boxes, ANNND the grill grate with the sides that flip up(all of which I got for fathers day this year).

and thanks Jayhawk for the tip... I do have a chimmney. filled it only 1/2 full, and laid it on a bed of coals, should I have filled it up? are those "trays" for smoking? Fill them up w/ hot coals?
YES, that marinade is very good, I would/will use it again, my local store has it on sale for .80/a bag, picking up more!...they also have a "mesquite" flavor. LOL!

Either method should work.
What I do is light a full chimney and then split it 50/50 into each tray (I think they are called corals). Then (and this is probably most important) I use the intake and exhaust vents to slow down the fire to a low level such as 225F at the grill surface. This can take a while and take a while to master.
THEN . . . as the cook progresses you can add unlit charcoal about two or three on each side as needed to keep the fire alive. You can also add wood chips, chunks, splits, etc. This is where that grate with the sides that flip up come in handy.
Another cheap trick that I've used is to make a 'lazy U' with heavy duty aluminum foil and place it on the fire grate in between the corals of charcoal. This keeps the heat truly indirect.
Just like any tool, the more you practice the better you'll get. It looks like you're off to a fine start!

Roy, as always your food looks incredible and tasty, you do us proud.....I just got my Weber Grill Mates package from Marlboro....it has 4 packs of that marinade you used and 3 shakers of rubs, a salt and pepper set that looks like little Weber Grills and a Stainless and Silicone Mop for applying sauces to grilling meats...looking forward to trying that marinade.....
