Got a question. Gonna convert my cooker to reverse flow. following chrome sportys thread. My stack is on the upper corner of my smoke chamber. When i move it to the opposite side. should i buy some more pipe to extend it down to grate level? or just place up in the same spot on the opposite side. Lookin at the pictures of Langs on their website. it appears as though theirs come in from the top. Will it make that much difference in controlling temps?

Unless I am mistaken the stack should not effect temp controll. The mass of the baffle will have a big effect of temp control. If you look at the baffle on a Lang you will see that the baffle is one big thick piece of metal. It's mass is large and helps control the temps.

Thanks Guy. Any tips on cleaning it out? we are gonna put in a 2" piece of pipe and cap. or maybe a ball valve. for drainage. My stepdad thought maybe we could run angle iron then bolt the baffle to the angle iron. creating the same effect but being able to remove the baffle to clean.

Several guys are making the mod of extending the stacks to grate level to allow the heat & smoke to stay in the cooking chamber a little longer.

Here are some pics to give you a better idea of how the Lang is put together. There is a drain for the baffle, as it will hold water if you would like it to do so. The pan is sloped towards the drain, and the stack is flush with the top of the smoker. Due to the design, there is no reason to extend the stack to the grate level. The last pick showes the view from the firebox where you can see the drain pipe run from the pan to the ball valve below the smoker. If you have anymore questions, please let me know. Also, because of the design of the baffle and dam, there is no reason to remove the baffle to clean the smoker. You just bring her to about 350 degrees, open the drain, and hit the innards with a garden hose. Spotless in no time. It seems that I should have cleaned her out before I posted these pics! :)

2 so far...walked twice in the first one, 6th overall outa 44. Second was a respectable showing. 3rd one in two weeks. :wink:
FatDaddy....totally agree with Noah, if you can angle the baffle down with a drain running down the middle it makes clean up a breeze!!!

I think ill look at doing the angled with the drain.. how much of a angle is that baffle sitting? that looks like 1" angle iron for the groove. then a 2" pipe?

Its hard to see in the third picture as the picture was taken a little crooked, but there is about a 3/4" drop towards the drain. You are correct about the other stuff. Take some pics, and keep us posted.

Can you explain how extending the stack to the grate level, keeps the heat longer? Is it because it rises first than goes out?:icon_blush:

Its a path of least resistance issue.
Heat moves up to the top, naturally, and immediately goes up the chimney.
With the extension, the heat still moves to the top, but cannot easily escape. The hottest air remains at the top, pushing slightly less hot air downward, until it can escape into the vent.

No, and yes.
All horizontals with a chimney in the top, probably.
Verticals with chimney at the top is where the "no" comes in, but the height lends itself to lower temps by design. Using a heat shield is the way to go when wanting to focus heat in a vertical.
There could be other methods, but the shield is what I use in the Dera

Understand, sort of...the heat shield keeps the heat in longer? I thought it was so direct heat wasn't hitting meat? and if I go "kicka- - " Pans- Eds method do I need a heat shield?
I gotta go back to work, I've been online too long...:rolleyes:

So far so good. That thick tank should do a good job holding the heat.
