Got my annual "PIG JIG" tomorrow. Will have 40-50 folks over for most of the afternoon trying to eat me out of house and home!
I will fire up the cooker at 4AM.
Got 6 butts, 6 whole chickens, 4 racks of ribs, 4 lbs of sausage, and 10 lbs. of chicken wings. Potato salad, two kinds of slaw, beans, fruit salad, chips, dips, home made ice cream, 2 gallons of seafood gumbo, etc....
It is 10:00 at night and is still 86 degrees and ~100% humidity! I was splitting up some hickory and thought I was going to have a heat stroke!
Almost too hot to BBQ! Almost.
Anyone else up cooking in the inferno heat??

I'm firing up the smoker at 4am as well. Just cooking a brisket and a butt. Heat index here is supposed to be between 110 and 115 tomorrow. Hell, I might not even have to light a fire in the cooker.

I've got 2 butts on right now. One's at 188* , the other has dropped from 180 to 165*. I may be up for a while longer. Been up since 4:10AM, so I'm fading fast. Cooking for BIL's 60th Bday tomorrow.

Fired it up a little early.
Though it would be best to let the butts "rest" a little in the cooler before I pull them this afternoon.
Had to do a little gas valve maintenance. Story of my life----fixing broke crap! At home and at work!
Still 81 degrees in the piney woods of Alabama! I am soaking wet with sweat!
Thought about BBQing in the nude but after seeing the sparks from the cooker I quickly gave up on that idea! Hind'a risky is shorts!

Threw some chicken thighs, wings, a couple fatties and a keilbasa on the top shelf of the WSM. Put two beercan chicks and a small pork loin on the lower shelf. Checked on them after finishing cutting grass and they look good. the second picture was thru the access door of the WSM without looking. Should be ready to eat in an hr or two.

I lit the pit before coming into work this morning. My wife and buddy are going to be the pit masters until I get home this afternoon. We're cooking about 28#s of butts and 20#s of brisket as practice for a comp next weekend. Tomorrow will be 5 racks of ribs for practice also. We gotta learn how to use my new pit soon. Luckily its only supposed to be around 95* today and tomorrow.

Holy Swamp Ace, I'm glad I'm not doing a comp this weekend. I just finished cleaning everything up, damn nice being able to run inside to cool off every once in a while.

I'm glad to see this thread. I got four butts going and was just outside thinking I must be outta my farkin mind. Surely no one else is cooking I says to meself. It's about 100° here today, BDS was 135 with no fire in it and all the intake and exhaust holes open. I should've just tossed the butts in there and took a nap.

I am about ready to go out and bear the heat, I am doing 10lbs of chicken this evening for dinner and some for lunch tomorrow. The temp here in Kansas is about 99 today and suppose to be 101 on Tuesday(actual temp).

I grilled a mess of potato wedges then made these amazing Fried green tomato BLTs for dinner. Thanks for the inspiration, GreenDriver!
