complete opposite there

Weird.

For whomever was asking earlier, I thought I would bring some of Ma's Clam Pie to dinner tomorrow. A taste of old Long Island for our out-of-town guests, as it were.

I have a smile from ear to ear just from reading how pyched everyone is getting about this event. I have already started drinking just to calm myself down

I appreciate everyones input - I figure I'll have 2 sets of the chuncky sauce/salsa I'm thinking both in different size cuts and persent it during the cooks meeting to see if either will fly. I'll also come armed with plan C.

I've been out of the scene for over a year, and I'm really jazzed about getting back in the mix!

We have been having some issues and I don't know anyone who can refurb it locally so I figure its got to go to the factory

What time is this dinner anyways tomorrow? And yes, wine is good!!!
nancee

nancee with 2 e's, i was just breaking your chops. Whats the deal with the refurb, just curious. It has to go all the way to LA?Is that cost effective? I dint own one but never heard of that so just curious?

IS EVERBODY ELSE PSYCHED YET??? I CANT WAIT TO GET THE WEEKEND STARTED

I beleive the handwashing station is always required, as is the fire extinguisher. It is generally on the organizer's checklist for meat inspection

Heres something i remembered tonight while prepping the trailer. The local board of health here have been pains in the ass at prior contests. KCBS requires a 3 bay cleaning station wash/rinse/sanatize.. but the BOH busted our chops for a 4th cleaning station to be used as 'handwash only". (even though we were not serving the public).

I didnt have a seperate tub, so set up a plain ole bucket and a water jug.. and that worked for them.

So, that being said, bring a bucket(or something) just in case.

Yes, I think we will take a pass as well and come out at the crack of stupid on Saturday. Btw, since I can't tkae the XIsland with the trailer, should I come over the Whitestone and take the Clearview or take the TNB and get there some other way?
thanks

I'm coming out mid-day tomorrow to set some stuff up (depending on the rain situation), but will probably miss the dinner. Have to take the car home then back out a little later in the evening.

Nancee,

As you come over the Throgs Neck stay to the left that puts you right onto the Clearview Expressway. Take that to the LIE - East to exit 59 and head south. The road will fork about a mile to a mile and half south of the LIE- Stay to the left, You'll be on Lakeland Avenue. Take that all the way south to the contest.
If you want just PM me and I'll give you my cell. We will be up at the A$$-Crack of Dawn anyway.

I will trade food/beer/whatever for some Amarone. What producer/vintage?

If I can get the time to stop at the beverage place I will be bringing plenty of dogfish head with me.

The Amarone is from "CAMPION CELLERS" vintage 04...my own..

Yeah, I saw. I am wondering if there is a camping supply place nearby.

I have spikes but I would love tent screws or bigger spikes.

Anyone got extras? I bought a 10x20 car-port type canopy and I want it nailed down good.

I don't have a trailer, but spent half a lifetime on the Cross Island Expressway when I went to Willie Palooza. Is this a better route or just stick to the CIE?

Thanks,

Yours in BBQ,

Cliff,

If you are towing a trailer or have a commercial vehicle you must take the Clearview Expressway. If you are taking a car the better choice is the Cross Island Parkway.

I'm sorry, I haven't used either. BUT I have been in contact with the manager from this place and seems happy to help out. They are also located very close to the Restaurant Depot.

South Bay Fish Market
1305 arctic Ave
Bohemia, NY 11716
631-589-0946
Fri-Sat 8am to 6pm
Directions:
Lakeland Ave North. Turn right onto Arctic Ave
(at carwash)

If you are coming from the North, turn LEFT at the car wash.

If you are taking the LIE to Vets Hwy to Lakeland, they are right on your way. You literally have to pass them to get to the event. Lakeland turns into Railroad which turns into Gillette.

The quality of the fish at South Bay is really good. They carry sashimi quality fish. In fact, I was just there buying tuna this morning. You'd probably have a hard time beating them unless you went to a wholesaler like Whitecap in Bay Shore.

We arrived at Gillette Park at around 2 PM. We were one of the first teams to arrive. Obviously, we have Internet access, which is very cool. The site is a park in a residential community. We're set up next to fellow CT team Wine and Swine. Got to spend some time with Phil and Willie B, weather seems to be breaking after some serious downpours. The forecast looks good for the rest of the weekend!

Took the Orient Point Ferry from New London. Was a great decision, a very relaxing way to get here, got the trailer on the boat too!

Here are a couple shots from the site....

Not sure about the live cam. I just got back from the park. BigBarry is spending the night there, but as we're not far I decided to come home tonight. I'll be back over there in the morning and will likely stay tomorrow night.

I got there just after 6:30 PM. It rained a bit while I was there, but overall it was not bad. BigBarry was good and wet though. We got our canopy up will be cookin' in the A.M.

Phil and his son are there, Julie (WannaBeBarbequeQueen) and her group is there. There is at least one first timer and there are a few others around too.

Bed is calling.

This is a great event!

I spent a couple of hours there this afternoon with my son and saw/met a bunch of the Brethren.

For Brother Will, things are going great vending. He sold out all of the pulled beef that he had prepared for the WEEKEND and is now smoking another 200lbs for tomorrow!

After rain and wind on Friday, the weather has become incredible and unusaully warm and pleasant for this area this late in October.

Everybody seems to be having a great time.

The Breast Cancer Help people are handling the raffles and can't believe the packages that The Brethren put together to raffle. They are EXTREMELY appreciative, and everyone involved should be proud.

Wow! What a contest! I have so many good things to say about this contest I don't know where to start. It wouldn't have mattered if we came in dead a$$ last. Willie B., Greg and Eric did such a wonderful job I would have sworn they organized a 100 contests. Everything was just perfect. The comradie, the people, the site, everything was as good if not better than any contest we have ever cooked. It was really something special. We also want to thank Clint for rescueing us from an especially scary junkie at 4:00 am in the morning. It's a story for another post but none the less he was our hero. It just made us proud to be a brethren team. It was a pleasure to compete against Ted, Mike, Nancee, Julie, Poobah, Clint, Steve, Scott and all the other teams. You are all great bbq cooks. Congratulations to Poobah for showing us all how it's done. A special thanks to Jerry and Linda Mullane.

Just got in, many thanks to all who helped put this together. We had a great time and getting called from the brisket was great. I'm pretty happy with our 13th place overall finish considering it was my first comp.

The only regret I have is not socializing a bit more, I tried to say hi to everyone I recognized but I know for sure there are many I missed.

I'll post some pictures tomorrow.

I got back from my son's soccer game yesterday afternoon, sat down for a bit, dozed off and never made it back to see the awards. I would have loved to have seen Phil getting his GC Trophy. Saturday's awards were great with Clint looking like a little kid opening presents on his birthday!

Congratulations to all.

Sledneck, glad to hear that there was a lot of food collected, and that you have such a great team. Doing this together with your son must be special.

Now for the other important aspect of the competition.

Next it was a privilege to be on the South Shore Smokers team and work with such great folks- Sled, Muzzle, Steve Jr. we seemed to have worked together as though we had been doing this for awhile. I AM ALIVE! Cant walk to well.. but I'M ALIVE.

all i can say is Holy Chit!.. Not only did Willy and his crew pull off a contest, but near 100% without a glitch.

I will post later about our antics as a team, but this post is to throw a huge THANK YOU to Team Willy and the Sayville Chamber for putting on what I can say is one of the best contests I have ever been to.
When Willy asked if he can use the Brethren name for the contest I must admit, first reaction was ITS AN HONOR!, but then as embarrasing as it is to admit, I was a little apprehensive about if this can be pulled off. Like Mfalco said, after the grill king firestorm, L.I. contests were riding the fence. I was kinda freaked that if stuff goes wrong beyond our control, we may get smeared the way Grillkings were. Willy went out of his way to keep my a$$ from freaking out. He treated The Brethren name and reputation as if it was his own...he knew I had the willys , and said THIS WILL NOT FAIL. He told me years ago he wanted to do this and recently when faced with people smashing the even before it even started, he said he was going to put on 'one kickass event' and show them how wrong they are. Well.. thats and understatment.

What many do not know, is that Willy and Team pulled this off in 4 months. Willy, Eric and Greg witht he backing of the Sayville Chamber, busted humps to pull this off, and it went off like a grand finale.. It was amazing.

Well willyB... You did it .. One awesome event.. Count me in for next year!

I can't believe it went so smoothly. It was a pleasure to be a part of such a well-run and attended event. It makes me proud to be a Brethren!!

Congrats to Pooh, SIDE and all the others who turned in such amazing food. The judges commented to the reps (and the score totals reflect) that there were many entries that were really very good. Tight races are the best.

That probably was the most amount of foot traffic i have ever seen at a contest. I know this might sound odd. I do really enjoy speaking with the public at the events but would like to see a walkway with caution tape each side or plastic fence barricades winding thru the site from sunday morning until after turn ins so that the public can view us but not come that close to us.

Wow, that's a lot of people. I think next year Willy B's should sell beer too. That was one happening place. I think I could see Willy B standing there chomping at the bit to go out to contestant row. Yeah....the placement was a bit random of the teams...but not in a no-go sort of way. Next year it'll just take someone to hand walk each person to their site and show them where to set up ;)

As if it hasn't been said enough, congrats to everyone who worked so hard to make this event perfect. I am absolutely exhausted and sore today but it was worth all of the pain. I wish I had taken pictures but here's my highlights:

* Watching Phil almost wet himself when he and his 900 team members got called for GC
* Turn-in judges frantically waving for me to run faster as I lept little fence and hit the table as the clock went 4-3-TWO SECONDS!
* Playing mind games with Guy's junkie friend who appeared from nowhere and made himself at home in their campsite (he thought we were carnies)
* Phil finishing his brisket and shoulders in a record FOUR hours
* Having Will save me with a couple racks of ribs yesterday morning after I discovered late Saturaday that 4 of my six racks were spoiled
* The late night disco party
* Watching Sled power through the pain and come in 3rd!
* Having Jerry & Linda rave about my shoulder (the 2 second turn-in) after bombing in pork all year
* My Drunky McDrunk "helper" drinking more of WannaB's tequila yesterday morning then passing out in a chair 2 hours before turn-in (but waking in time to convince me to burn the cr*p out my chicken skin. Note, skinless chicken DOES NOT score well
* Having the "real" Wine&Swine arrive Sunday morning to pull me through when I decided not to turn anything in (cooking alone is way too much work)
* Getting calls in 7 out of 8 categories. Freakin' chicken.
* MEETING TONS OF NEW FRIENDS

What a way to end my first year of competing. I may have to reconsider my retirement.

I just want to say how proud I am to a part of such a great group as the Brethren and to be able to be a part of such an incredible event. Willie B you are the best. I still can not believe what an awesome job you, Eric, Barry and everyone else have done. Congratulations to all of my friends and of course to the almighty Poohbah who proves once again there is a reason he has the title. My brother, Smoke in Da Eye, is the man and I could not be more proud of him. I was planning on bringing my chef & sous chef to help (as well as one of our team members who bailed last minute Saturday) but my restaurant's cold line cook's wife went into labor 2 months early on Saturday morning (baby is ok) and Newsday decided to run a little blurb about us on Friday, so, plans changed and sorry SIDE you'll be going it alone (with a little help from me). All I can say is my brother kicks A**!!! I helped him set up in the rain after dinner service Friday night, came back first thing Satuday helped with the grilling and flew back to the restaurant to do dinner prep and work the line and then went back to help out at about midnight (p.s. if anyone ever asks me to smell a piece of meat at 2am again to see if it is rotten or not I will lose it, oh and wow was it rotten, I think I can still smell it). I had to come and open the restaurant yesterday morning for brunch (after leaving Sayville around 2 or 3 Saturday night/Sunday morning and driving home and getting a solid 2 hours sleep). Of course I get stuck here and get the panic call from SIDE at 11am (1 hour before turn) that our friend was drunk (again) and had passed out (again)! Well needless to say if anyone ever wants to know just how fast you can drive from Garden City to Sayville on a Sunday morning with nothing in your car except a Japanese chef knife in a wooden box and a big bag of green leaf lettuce just ask. I ran to our tent and stared putting lettuce in the boxes just in time for our "drunk friend" to wake up and stumble over to a smoker, burn his leg and convince Clint who was on 0 sleep and 100% adrenaline to put the chicken back on the grill (burned in 10 seconds). Well in the end everything got turned in or time (with well over 2 seconds to spare) and the food was all amazing. It was also my 7 year anniversary yesterday and I had promised the wife we would go out with the kids for dinner, so I finished, helped clean up and ran and jumped in the car only to find a flat tire! Made it home, only an hour late for dinner, and Clint won 1st place pork!!! When can we do it again?

Yay! I got some sleep!!

Ok, some well deserved 'thank you's' are in order.

First and foremost, a HUGE thank you to the Sayville Chamber of Commerce. They were the true backbone of this event. They should have gotten more recognition on site and that will have to change if we do this again next year. Working with them was pleasure and they were generous with time, effort, expertise and donations.

Thanks also go to Jerry, Linda, Don and Leslie. They were the KCBS reps who made sure that anything that could have gone wrong with the competition end didn't. They were fantastic.

I would like to thank all of the judges who came down and helped out. I'm singling out the judges as that was the area that I spent the most time working on. They did a great job. Thank you one and all.

As part of the event team I would like to thank all of the teams that came down and participated in our inaugural event. It was a pleasure and a privilege having you there.

On a strictly personal level, I would like to thank Julie's team and Phil's team for providing on occasion a place to sit down and relax for a little while. It was nice to have a place of welcome and refuge for a bit.

Also on a personal level, thank you to Chris, Fred and Gary who were helping Willie. On numerous occasions they stepped up and took care of problems that arose at the judging area. If our road was smooth and lacked bumps, they were the pavers.

I will try to get concrete data on the amount of food that was donated to Island Harvest and the amount of money raised by Breast Cancer Help, Inc.

Last of all, thank YOU for reading these ramblings.

I know it's already been said a million times but, WOW what a great event!! Everyone who was involved went out of their way to make sure us teams had everything we needed and if we needed anything just ask. You could tell that the comp. was run by people who compete. Absolutely the most cooker friendly event I've done. Keeping the teams informed before the comp., the gift bags, the cooks dinner, the cooks breakfast, calling top ten in each category, and giving out trophies and money to the top five overall! But the most important thing was that we all came together for a great cause. Great job guys!

Willie/Eric/Big Barry - I'm really proud of you for what you guys accomplished. Amazing stuff. Goes to show you that it's not about the experience but about the desire to succeed and put in 110%.

In retrospect, I'm more upset knowing I missed out on the chance to be with so many of my friends in Sayville vs. being in Dover where my expectations were sorely dissappointed in some ways.

So, what's the date for 2008 ?? :icon_blush:

Sure enough we missed you Vinnie. It was the best contest of the year for us. It was like Harpoon without the beer. It was more like having a two day party with a few hundred of your best friends. Willie B. did us proud.

Thank you Willie, Eric, Barry & everyone else that worked to make this event a success. There were so many things that were great about this event. It was so organized, and well thought out. Thanks to every one for making our team feel welcome at our first comp. We had had so much fun, and we are looking forward to the next event!

P.S.
Big Barry is the man! He helped us keep our canopies on the ground friday night during those strong gusts of wind. We owe you a pack of stakes & Rope Barry!

Hi,

Ok, here is something else that is very cool about the brethren. There were two reporters walking around talking to competitors. Neither announced themselves as such, they just wanted to get the 'feel' of the event. They walked around and spoke to competitors.

Both had high praise and were very complimentary about the friendliness of the teams.

So, to those people that I asked to help out and shmooze a bit, you did it without knowing, cause your that sorta people. Thank you all for your help.

Mike

Willie was adamant about making this a cooker-friendly event. It took lots of planning/head-butting and hard work by everyone involved to ensure it was. It's great to see the positive feedback from the teams. It will only get better.

BTW - We still can't believe how well it went for a 1st time event organized by folks with ZERO experience!!! Beer really helps get things done (see, Honey?)

Ya know, as I sit here, really rested now, there are a few things I want to reflect on. First is friendship. I saw it everywhere I turned. Most people never met me, didn't know who I was, yet, through our interactions here on the web site we were friends. Comrades in arms. Phil, who I have now cooked with three times, has a heart the size of Texas and the patience of a saint. With only three cooks together he is trusting more than I think I trusted myself at times. What a guy. And with two additional new folks on our team he was kind and had patience with us all. Great man. Great family. James spending the whole time with us, sick on and off as a dog, hacking to beat the band. And Sunday Sharon shows up with Jackie and her entourage to help out. It truly is a family event for Phil. They were great to have around.

I think in a big part, the success of this endeavor was not only Willy, Greg's, Eric's and Sayville's dedication to making it happen, but to a group of teams, of friends, that knew how to have a good time, how to be friends, and how to compete together. And that friendship started here, with a bigger group of friends. Even at the awards ceremonies you could feel everyone rooting for each other. It's great to be a part of it. Thanks for letting me a part of this great group. And for not doing torturous things to me as I slept Sunday morning out in the open. Scott

ok, I'm rested and awake now. So as usual. i will now stand on the soapbox.

First off I will say this ONE MORE TIME. Just to make sure it is CLEAR.
I know most everyone has heard it before.
THANKS(again) to The SAYVILLE CHAMBER of Commerce who plugged Team Willy and their efforts into their Fall Festival to make for a great competition. I was on the phone for a long time with a member of the chamber and they are all VERY aware of how much we, the competitors, appreciate their efforts and contribution to making this contest a great success. Thanks again.

moving right along.
Team Willy and the Sayville Chamber pulled off an awesome event. My involvment was pretty much limited to the name of the event and helping Willy hash some stuff out. When Willy first asked me to put up that "save the date" post , and you guys were all busting for hints all I gave was '3 amigos'.. Thats becase I was NOT going to compete, but have Jorge, Parrothead, and Chad, my 3 aces in the hole compete as my team, while i was a "Team Liason". My job was to make sure everyone had everything they needed. Well, after alot of agonizing and asking opinions so many people told me to get out there, and it would "look bad" if I did not compete at the event that bares our name. Nancee from Purple Turtle was the one that really made up my mind.. THANKS NANCY!!! My biggest concern was that if I won by some fluke, people would yell FIX!!! which at the awards ceremony waz the chant of the day. Thanks sledneck and Muzzlebrake. :eusa_clap.

Here are some highlights.

I cooked the contest on a Bandera with a Spicewine backing me up. I left the Klose pits home for this. I figured it be great to cook an event that Willy named after/for us on the pit that we all started from.

After a few walks they day before at grilling, WillyB puts my Fourth trophy from 4 KCBS catagories on the floor, steps back and disavows any further responsibilty.

Jerry and Linda the KCBS reps taking a 'brief intermission' before announcing GC. Then saying.. "Ok, I guess we gotta do it."

Well.. they did! BBQ-Brethren takes GC at the Battle of The BBQ Brethren.:eek: I almost wet myslef, for 2 reasons, my first sanctioned GC and my worst fear just happened at the same time. chit.. But it happened.

The best thing, the applause and ovation when they announced it.. The looks on my friends faces and the handshakes, hugs and applause as I walked up. So many great words were said. Qhaven, Lakeside, Muzzlebrake, Southshore, SIDE.. and others.. you guys are great..

The worst thing,...... my kids had to hear some 'sour grapes' from people while they were walking back from the awards. Then I had to explain to them how the double blind system works, how we have KCBS reps, etc... No, it was NOT a fix and NO it was not bullchit. Jackie said that she didnt think it was a team talking.. so if the complainers ever read this, those were my kids next to you while u were bitchin.... It may not be the Jack or the AR, but it was our last local contest of the year, it was sanctioned, and it was run by KCBS reps. Get over it. No matter what, someone will always find something to complain about.

The team I had put together worked like a machine. It was amazing. Although only 3 of the 5 have any experience in competition, the others jumped right in and executed.

A HUGE thanks has to go to Dr. BBQ. Cooking with him at the American Royal took my competing to another level. So much was learned that weekend, and I do not mean in recipes or cooking, but in competing. My entire approach to crunch time changed. From 5AM to 1:30PM, EVERYTHING was done differently from the previous 3 years and it showed. We were relaxed. We were in 100% control. I remember going into Brisket turn-in with 35 minutes to spare. Not the usual 15. The techniques on handling all 4 catagories have changed. I remember putting the trust in my team mates to allow them to help me do what needed to be done. I would say "this has to be done", and walk away to do what I needed to do... Just like the Dr did with Jorge and I.. If Ray Lampe can trust me at the American Royal, I can trust my team too. REMEMBER THAT!!! So, as I said to the Dr over the phone before, my first GC was in a tremendous part thanks to him.

something else that made me really proud... In exchange for cooking BBQ at a halloween party for 30 of my daughters friends next saturday, about a dozen of them came down to the event and helped out. At 2:30, we walked around and offered a (willing to work) teenager to help knock down sites. They would wash dishes, clean up, help pack up. The bigger guys helped load cookers onto trucks and take down the canopies.
Most teams were grateful, but hesitant, others took them in and used their not sore feet and good backs. The guys were hauling pits onto the pickup trucks, and I saw the girls running back and forth into my trailer with piles of stuff to wash in the sink, then bring it back clean. The kids had a great time helping out.. got to eat till they were stuffed, and to see them swarming around the cook sites like mosquitos in brethren tee shirts was fun to watch.

our butts were at 170 degrees at 2AM and the pits were in the 250 range the whole time.. we think. Had to do some fast improvising but somehow managed to pull out a 6th place on em.

Ribs.. first time ever turning in spares and first time cooking spares on the spicewine. Got 1st place. No more babybacks for me. :)

One of my new team mates cooks BBQ wrapped in banana leaves and builds the fire in a hole in the ground. He has no pit, and had no clue what he was about to experience, but he had a big grin on his face the entire time. He is hooked... big time.

WhoTF is Jerry? Dunno, but him and scott brought some damn fine tequilla on Saturday.. which was gone sunday.

looking around and seeing the Brethren Pig flying all over the place was awesome. Someone said after Grilling awards that only "Brethen" won.. and its a fix.. HELLLOOOOOOO ALMOST EVERYONE there was from here.

The comaradie displayed was really great. No matter where you went, the tents were open and the beer was cold. No one 'just walked by' without stopping in. I think i made it to each and every site at least once, and thats really unusual for me. But having a good 5 man team allows you to wander around knowing things are taken care of.

transformer BBQ.. Holy Chit.. You guys pull 5th overall after competing at Dover Downs the same weekend.. Damn, thank god you were tired.

Sled.. 4th place on happy pills and shot to chit.. Great team u had there. :eusa_clap

and most important:

(My pants stayed up during brisket turn in. )

sorry for the long post and a bit of rant on bittersweet victory, there can be so much to talk about regarding how things that happened, but i bored u all enuf.. but it is what it is and it was a GREAT event!

This will be my first and only statement on this topic.

Anyone who attended the event knows that my area of responsibility onsite was the judging. I was there the entire time. Before anything happened, while anything happened and after anything happened regarding judging, I was there.

I sincerely hope that whoever made the comments that Phil mentioned were joking around.

If they were serious than they are nothing more than ignorant, pusillanimous punks. They are not just impugning the integrity of Phil and his team but myself, Linda, Jerry, Don and Leslie, every judge, every table captain and the KCBS as a whole.

To make it even more clear that they are cowards not deserving further comment, at no time did anyone speak to any of the reps (to the best of my knowledge) or myself. You think there is a problem? Step up, be a man and say something. Don't be a punk and talk behind peoples backs.

The Taste of Grand Rapids Michigan KCBS contest has left horrible memories in my head.
Thats why I dont do competitions anymore. We will leave this area now.

To do a competition as well as this one was organized as well as this one was a hell of a lot of fun, it may have changed my outlook for future competitions.

I would love to participate in a contest like this. Very obvious that I cant haul all my equipment and tools to L.I. But sure would love to come and assist another team.\

Great recap, Phil. I personally was as happy seeing you win GC Sunday as I was winning my first grilling GC Saturday.

But the same would have been said if it had been the Pollocks, Sled, Transformer, or ANY of the Brethren teams taking that walk. It's our willingness to openly share tips and techniques to teams who are starting out, to lend a hand when one is desperately needed, and to cheer when one of our own succeeds that makes this place so darn special.

And to anyone who may have cried "fix", there's always an open invitation to come and join us here. Otherwise, I've got some practicing to do before I see you again at Battle of the Brethren Part 2.

i know all of the ribbing i get for 13th is funny and i enjoy it. I cooked what i thought was the best chicken that i have ever turned in. Seriously when the names were being called i EXPECTED to hear my name when they got to to the top 5.The chicken was perfect, they were tender, juicy, bite thru skin with the teeth marks, looked great etc. all of the things i have never done before and always received 13th for. Just wasn't my day.considering how much pain i was in i felt like leaving after chicken was called cause i was for sure i would not walk in any other category and was i ever shocked when i did. The chicken came in 16th.Out of 30 teams. I am not changing a thing. I LOVE the new comments card that KCBS hands out but i received it from judges for the other 3 categories of which i did OK in but none for chicken . Some of the comment cards were praising my food i suppose those were from the few 998 i received, well a 998 is a no comment needed. i would like to know from the guy who gave me a 767 in chicken . That system needs to be tweaked in that anything scored below an 8 should be defined by a mandatory comment even if it is "i just didn't like the taste of the sauce". Also when they do the comment card they should also identify which score they gave you. I received a 995 in brisket. I also received a comment card in brisket stating that my presentation was awesome, my taste was awesome but my brisket was undercooked.I am assuming that that is the 995 guy. The brisket was not undercooked it was dry and way overcooked.

BTW i posted this as it pertained to my scores in this event only and not meant to start the debate over the cards and judging etc we can do that elsewhere as i am sure we have and forever will

What a great time we had, but that has been said already. Congrats to Phil and his team. All the kids that you brought were very respectable and you should be very proud of them. Also, the one thing about phil is he always looks exhausted from the minute he gets there. I think next year(hopefully) Wllie B needs to compete. I think Will probably felt funny competing because if he won, people would have a problem with it. But, whoever would have a problem with it, dont compete. Their are probably ten other teams that would take your spot. Things didnt go that well for us, 23 out of 30, but watching my dad get 3rd in pork and spending 2 whole days with my brothers and father made it a great contest. We did do better in grilling 6th place overall, which was cool. Everyone keeps saying great job and thx to everyone who contributed, and it is so true. I had so much fun because the event went so smooth and it is a great way to end the year competing. Getting to hang with all who was their made the competition even better. My wife pretty much summed it up for me by saying " you came in 23rd out of 30, which pretty much sucked, but you had the most fun you ever had" Thats what this is all about. My brother(bbqesq) and I are proud to be brethren and proud to be all your brothers.

There is a KCBS formula, it goes several levels, but the first one is the thrown out scores...

The first tie breaker is total score in Taste
second: total score in tenderness
third total Appearance

4th is the thrown out score
5th is a computer coin toss...

usually you'd have to ask a rep how far it went (or see the individual scores from the other team)

I had a GREAT time spending the weekend at the park. This was my first comp and our first as a team. I want to commend Willie, Eric, Big Barry, the Chamber and the rest of the unsung heroes who put this together. Everyone was so approachable and helpful, it is direct reflection on how this web site is run (No BS). Barry thanks for the spikes that kept our tent on the field (we owe you a pack, they cracked) and the use of the hose.
The best part of the weekend was getting called up. It was a proud moment for our team. But the most exciting was turning in the brisket after running across the park to only make it with 15 secs to spare... my team would have killed me, it was me messing with presentation that would have gotten us dq'd... my bad.
Lastly I'd like to thank my teammates, Joe and Jeremy. We'll gett'em next time!

Congrats to Phil and all the competitors! This was a great learning experience and adventure.

I had the time of my life. The LI Brethren really know how to treat people well. Whether it be Dr. BBQ Class, Willie Palooza or the Battle of the BBQ Brethren, every thing they do is first class. I saw great friends this past weekend, made new friends and can't wait to visit the LI Brethren and their events again. Sayville was the most cooker friendly event I have experienced. The hospitality was superb, chef dinner, chef breakfast, valet packup! Congrats to all who organized, walked, participated etc... Sayville and Willie Palooza are on the A list for next year and years to come! You really did a great job!!!

Thank you, Thank you, Thank you!

I finally had the time to read the entire thread here, and want to add my Thanks to the organizers. I had a blast competing on my own for the first time with lots of help from the wife. I wish I had had time to visit and socialize with more people than my next door neighbours. But by Sunday i was positively punchy from exhaustion, I hit the ground running Saturday morning and was completely in my element grilling under pressure, but it certainly clouded my judgment about the cooking capacity of a 20X30 Klose. I actually packed two briskets, two butts and two racks of St. Louis ribs in there. Comment cards had polite things like "tasted like petrol" and "a little undercooked for my taste".

so with all the confusion about the team name change, I was hoping that Smokin' Q NYC could be listed for my Grilling scores and Pit Beach for Barbecue.

And yes I will be opening a Barbecue Restaurant.

The moderators are trying to get a hold on some rampant chatter in comp and qtalk.. So some scrubbing is happening.

being the contest is over, I would suggest opening up a chatter thread in Woodpile to ride the wave of the Saville contest. This thread is approaching the never ending story and the peanut thread.

I love this thread.

There is alot of pride and work going into it.

It is the fulfilment of a dream from the founder, and I enjoys its evolution.

From the Backyard

To the American Royal,

To Sayville NY

That means alot to me.

It went from the backyard, to national, to state/local, to the local food depository.

Breast cancer awareness from Willy aspect, with the Sledneck Food depository stuff.

This kinda stuff is what I loved with the early Brethren stuff, but now state/nation wide.

The "spirit" of the brethren impacting as many lives as possible.

This stuff makes me proud.

I used to be the one organizing this. Now, others have stepped in and run with the ball thousands of yards beyond.

Thank you to all the NY and North East brothers that took this comp to Brethren proportions.

I was there at the start, but you are continuing to the future!

Thank you

I am with you Bill. I am also very proud of what was accomplished in Sayville. Not bad for a bunch of people that were labeled Illuminati. People don't realize what a special group of people the Brethren are and their willingness to help anyone in need at a moments notice.

They couldn't have been THAT bad as I was able to tolerate them while waiting for the awards to start. I normally don't like most bands, you'd think with that kind of anticipation it would magnify things a bit :). I guess I was having such a great time overall that I really didn't care.

You know what, Steve? I think your right. I got your back on this. Contact the guy who made the video and demand your money back.

Oh, wait, it's free. He didn't charge you a dime.

I got a kick out of this line by the author...

" I met another judge, Yolanda, the mother in law of Phil Rizzardi. She regals me with stories of the exploits of Phil. who is beginning to sound like King Authur. I am really looking forward to meeting him."

Now I know why Phil is buying tin knights in armor. He is King Authur.
