i was there yesterday checking it out. are we gonna be able to drive (keep vehicles at) to the sites? also, don't forget to check out the cool tree in front of the yellow building on gillette ave.

this will be my first competition ever! i am happy that it's this one and am proud to be competing among the Brethren under the team name "Better Days BBQ"!

we will not be on the dirt of the infield we will be outside on the grass and then snaking around towards collins and up towards main st. I am waiting on the site layout to be faxed to me so we can put it up. This is a first come first serve spot assingment except for a few exceptions for people with trailers. you will be able to arrive any time after 12 noon on Friday and before 7pm that nite. Saturday arrivle has to be before 9am because the park will be open to the public at that point they will not let you drive in.

Charlie and I were thinking of competing incognito as Moishe the Mohel and the Kosher Kue Krewe ("...From Bris to Brisket, we do it all. No Pork..."), then we figured that maybe we should wait until we got good enough to need to compete incognito. Still waiting.

Two questions for the powers that be. Are there any rules regarding the grilling categories other than KCBS garnish?

Also, is there room for a tent other than within preassigned spots?

Unless things are different during the cookoff, I walk my dog in that park all the time. There aren't any "no dogs" signs around and there are usually plenty of people that bring animals to the fair so I would think he could bring it.

There also aren't hot coals and cookers around at other times either.

I've been to several contests where teams brought their dogs that were nearby my site. Most have been very good, well behaved and most importantly tied up for everyone's safety including the dog.

One of the last contests, had a very likeable larger dog where the owner allowed it to freely roam without supervision. It was nice at first, until the dog nearly got in the way of a hot charcoal chimney...

Also be sure the dog is not a barker being around large crowds... it could piss off the team next to you.

Go to the Battle of the Barbecue Brethren, on Oct. 20 and 21 at the Sayville Chamber of Commerce Fall Festival, to be held at Gillette Park in Sayville. The official New York State championship event (similar to past Grill Kings competitions) begins on Saturday. From noon on, there will be a grilling competition under the aegis of the New England Barbecue Society, with judging to take place between 4 and 5 p.m. Sunday is the big barbecuing competition, sanctioned by the Kansas City Barbecue Society. It begins at noon, with prizes awarded around 5 p.m. Barbecue vendors, such as Willie B's of Bay Shore and Tennessee Jacks of Islip, will sell their slow-smoked fare both days. Hi,

In addition to more judges, we really, really need someone who can act as the event photographer.

If you can help us out, please let me know. We need a montage of the event. Some photos of set up, a bunch of competitors camps, some of the judges and their area, a few of the awards ceremonies, etc.

Want to be even more of a help? Come up to me during the event and let me know what we are doing well and what we are doing poorly.

This is our first event and we want it go as smoothly and as enjoyably as possible.

you need 5 table captains and two people to do turn in boxes and clean up boxes after each catagory. also it is a given that some will not show

It would be a great help if you could let me know if you would be ok with me stopping by with some people and you showing off your equipment and maybe talking about BBQ and competing.

How well received this event is will be a major determining factor when creating a quality event for next year.

I could be wrong here since I don't know for sure, but I would assume that 6am is acceptable since we have to arrive prior to 9am on Saturday as they'll be opening the space to the public at that time.

Looks like a nice ride but I live in Western CT... it would take me just as long to get to the New London Ferry. I believe that there is one also in Bridgeport, CT. to Port Jefferson.

Was kinda looking for some local backroads route once I get off the Throgs Neck Bridge...

Right off the Throgs Neck Bridge, you could also jump on the Clearview Expressway and then take that to the LIE... Basically the same thing and almost the same distance to the LIE (Clearview is an expressway so trucks can ride on it).

I will be attending your event as a KCBS judge. I usually photograph the awards presentation and would enjoy spending time to help you guys document your first event.

I will probably get there friday afternoon. I usually stay on site at the events that I go to. I have a conversion van. All you guys would have to do is give me a place to park.

Sorry Eric we won't be there until Saturday. But good luck with that I think it's a great idea. We all did it at The Harvard Fall Festival in September and it was awesome! Getting to try different foods from all the teams was cool. Have fun!!

I am running a little slow on cooks packets sorry for the delay.
you can arrive anytime before 7pm Friday and before 9am on saturday.
meat inspection for boths days begins sat morn at 8am
cooks meeting 9am judges meeting 10am kcbs cooks meeting after awards on sat.
movie friday night after sponcer dinner. sat night pizza for the teams in the judges tent. sunday morn breakfast in the judges tent at 8am. sunday judges meeting 10am
sites will be giving out on a first come first serve basis.
theres another movie sat nite teams are responciable for removeing there own grease and ash

If you live closer to the Port Jeff Ferry, You can get right off the ferry and come down route 112. (112 is right in front of the ferry terminal) It will put you about 8 ish Miles East of the comp..

I am running a little slow on cooks packets sorry for the delay.
you can arrive anytime before 7pm Friday and before 9am on saturday.
meat inspection for boths days begins sat morn at 8am
cooks meeting 9am judges meeting 10am kcbs cooks meeting after awards on sat.
movie friday night after sponcer dinner. sat night pizza for the teams in the judges tent. sunday morn breakfast in the judges tent at 8am. sunday judges meeting 10am
sites will be giving out on a first come first serve basis.
theres another movie sat nite teams are responciable for removeing there own grease and ash
please e-mail me who you would like the check made out to if you win. there will be no moving vehicles between 9am and 9pm sat and 9am and 5pm sunday. sat awards will be approx 5pm as will sundays. if you have any questions please feel free to call me at the store 631-206-2580 or e-mail. if i havent coverd everything please ask as this is my first comp as an organizer.
Parking is just north of the park about 200 yards away maybe there is room on the infield for about 6v cars that we are able to park there so get there early.

There are a few people that may be attending that I would like to ensure have the full 'Brethren' experience. I'm talking about reporters, event managers and such.

It would be a great help if you could let me know if you would be ok with me stopping by with some people and you showing off your equipment and maybe talking about BBQ and competing.

8 pm sounds good to me...yes there will be Skippy Burgers, but probably not part of the communal dinner, but always enough to feed everyone...maybe Late Friday night snack (unless Skip has to work) then Skippy burgers will be made Saturday at some point after the grilling contest, promise there will be Skippy burgers!!

You could double check with the Chamber of Commerce, but I doubt it's an issue having a dog in a city park. In fact, they hosted a dog frisbee contest there in July (http://yankeeflyers.com/competitions/competitions.htm).

You can definitely bring the dog. The only place you probably can't take the dog is the park directly across the street as there is a "no pets" sign there, although its kinda hidden. There was just a fair this past weekend in sayville and there were plenty of people there with dogs.

Just a note folks, I got 2000 pink two part raffle tickets to do the 50/50. I'll start by going around but hopefully we can get some signage or family members to help with soliciting for monies. I'm hoping to get it started Friday evening then will be cooking a fair amount on Saturday and Sunday. If you have a wife, or a mom ,or gradma (or male equivilants)that are interested in helping with this, send them over to the BBQ brethren team late Friday or early Saturday. dry heat bad.....wet handtowels heated in microwave better, anybody got a small microwaver they can bring? i have heard this many time this week not sure if any truth to it but i would believe anything at this point

Question about the grilling competition. I'm oft confused by the garnish ruels for this poriton of the competition. I've always thought that garnsh is open to anything edible - is that the case here? I noticed that it says on the cooks pakcaet that KCBS rules apply to the grilling comp. If that's the case does that mean the typical green leaf, parsley, cilantro deal? Or does KCBS have seperate rules for grilling competitions?

I told him possibly 20 of 30 teams will need briskets, bone-in pork shoulder and ribs (baby and spares). Boneless shoulders are no problem. Chicken wings, thighs and other parts are better bought in the supermarket/costco because they only sell in volume (40lbs).

I also told him that the event food vendors will also need a supply of assorted BBQ meats, too.

He said he will get in enough of the comp. stuff for Friday AM and would appreciate any other feedback.

I told him I would contact the vendors and ask them to call him to make sure he is prepared.

Nice guy. Said he would print flyer out and put around store.

Obviously not the organizer of this event... but KCBS granish means the garnish rules used for the "Big 4" BBQ meats. In your words its the ... "typical green leaf, parsley, cilantro deal".

KCBS does not have separate rules for grilling... and as far as I know they don't sanction grilling contests... although (as in this case), many times their rules are used for such contests.

(NEBS on the other hand does sanction grilling contests, uses the 1-9 weighting, 6 servings from KCBS but allows each event organizer to adjust other rules as they see fit)

Thanks Willie - but to be clear - what if I had something that was going to be served with the steak that was to be eaten with it to accentuate the flavor of the steak.......example: I searve the steak with roasted onions with the thought that they are to be eaten togther

Would that be considered a garnish? I know I could probably stuff whatever I wanted in the steak - why not on top?

No stuffing allowed, just the meat or fruit... "Aluminum foil, toothpicks, skewers, foreign material, and/or stuffing is prohibited in the container. (Marked entries will receive a one (1) in all criteria
from all Judges)."

You can sauce the top with a chunky sauce containing onions or whatever but only if it is a fine dice and doesn't "pool/puddle" in the container. Anything else would be considered a foreign object.

Just to add to this I was at the Bohemia RD about a month ago and got a 1 day pass no questions asked. Well almost no questions, they did ask for the name of the business.

Heres something i remembered tonight while prepping the trailer. The local board of health here have been pains in the ass at prior contests. KCBS requires a 3 bay cleaning station wash/rinse/sanatize.. but the BOH busted our chops for a 4th cleaning station to be used as 'handwash only". (even though we were not serving the public).

I didnt have a seperate tub, so set up a plain ole bucket and a water jug.. and that worked for them.

So, that being said, bring a bucket(or something) just in case.

under KCBS, that is absolutely marking and DQ material.

Even if the grilling is somewhat less stringent, i wouldnt do it. Just brush the sauce on it. 'Garnishing' with sauce for appearance is not KCBS legal.

During the snowmobile season i used to leave straight from the city and make the 5 hour drive upstate after work and many a friday i was weaving fighting to keep my eyes open on the thruway. I then started going home sleeping and waking up at 2AM and then leaving and i felt much better

under KCBS, that is absolutely marking and DQ material.

Even if the grilling is somewhat less stringent, i wouldnt do it. Just brush the sauce on it. 'Garnishing' with sauce for appearance is not KCBS legal.

Poob - is a salsa acceptable as long as it's in "small dice" whatever that is - do you know what would consitiute a "small dice"?

KCBS says pooling and puddling a no no. Won't the salsa constitute pooling or puddling? guess the way to find out is turn it in and see what happens. I think the intent of the rule is to create foods not easily identified by personalization for judging. What about pureeing the salsa and slather on. Scott

I'm considering pureeing but it will destroy the look I'm going for......guess I'll either roll the dice or just let it go....

I'm no expert on grilling rules, but salsa is basically a sauce. I was under the assumption that onions, tomatoes etc. can be part of a sauce as long as the pieces are under 1/4 cubes..

Best suggestion is to bring this and a more basic sauce... When you arrive talk to the rep who is making the final decisions on rules to discuss.

In my experience, "small dice" means about the size of the head of a kitchen match, somewhere between an eighth and a quarter of an inch. I have never seen an "official" definition, but I think that was used at the CBJ class I took.

Hey Brian! The Baby is great - thanks - 8 months old - ready to compete in his first comp.

I'm in bringing two dishes for the communal dinner ...burritos and a chicken dish :roll: is that enough?

Just a quick follow up here. If I'm sleeping in the park Thursday to watch the tent and then being there for check in Friday I'm not going to have time to make any cakes or other desserts. I'll see if I can buy some (maybe I'll stop at Entenmanns).

FWIW, I think the problem arises when you take a set of rules developed for a certain set of circumstances and try to apply them unaltered to a different set of circumstances. I'd agree with Scott as to the intent of the rule. Perhaps in the future, NEBS could look at modifying the KCBS rules to keep the intent, while allowing for the greater variety of foods and sauces that get entered into grilling contests. Does anyone know to whom such a suggestion could be made?

I know that NEBS has tried to put together a set of rules for grilling contests, but don't think anything final or official has come out of it. Maybe a note to someone at the NEBS Board (where are you, Steve?) would be a way to go....there hasn't been a consensus that I've seen....

Not only will they have to take into account the size of the product on top, but there is going to be associated pooling, etc. I'd think all tis could easily be accepted by allowing a "topping" or "dressing" of the grilled product. Don't see where this could be a "marking" issue. scott

Not having anything to do with the rules but I think alot of judges think of it as hiding or masking a taste. I was told that early on after a few contests where i tried similar things. My .02

Question on saucing for the grilling contest: would it be considered marking if you put a sauce in a squeeze bottle and do a criss cross type pattern with it. Would that be legal under KCBS rules?

ask the question and any other questions during the cooks meeting sat morning.

What he said. We have a committee working on a set of grilling guidelines. I think they are making progress but they'll get more done on it in the off season. Picture a menu of rules and the organizer get's to pick which ones for each category in the contest. It's impossible to cover all situations but the guidelines will help to make it easier on the organizer and reps of the contest.
