Hello brothers,
This is the placeto ask this question and get a sound answer. I have access to a commercial fridge that is 8 ft long 6 1/2 high and 29" deep. All metal. 2 slam lock doors. The picture, in fantasy smokers, in our file section best portrays its apperance. Just exclude the firebox and the middle door. question is, the interior is sheet metal, like you would find on a garage entry door. Would this interior be safe, in your opinion, if I was to convert this into my dream smoker? This box seems perfect but your opinions are valued and often heeded. Please share your thoughts. Thanks

A commercial fridge will be stainless steel on the inside and out.......you're good to go:biggrin:

lol. interior is not stainless its simalar to the steel used on an entry garage door

So the interior steel is painted like a garage door is?

Even if it is zinc coated......you would never get to the temps it takes to make that stuff smoke.....wipe it down with vinegar, then wipe it down with cooking oil and season the hell out of it...you'll be ok!

Vinegar? please explain. I believe you may be correct on the metal walls. there is no paint just grayish marbled looking sheet metal on the interior. The garage door I would be referring to would be a pass door not an overhead. I think building the fire box inside with baffles directing heat to either side of the box may be the wat to go.

I think building the fire box inside with baffles directing heat to either side of the box may be the wat to go.Zinc coated metals tend to be slick(oily) the vinegar will remove that and etches the coating some(old body shop trick) that will give the lard, veggie oil or whatever you use a good foothold when you season it.
