Here it is....

I got some spare ribs and seasoned with salt, pepper
and garlic powder then some country style ribs and
a fatty seasoned with Magic Dust..
I fired up 8 pieces of Kingsford and added it to my basket
of Mesquite Charcoal with four pieces of Hickory chunks.

In 15 minutes the drum was at 225 degrees and I added the meat.

you lift the lid or it will spike!!!

Meal complete!!! With Garden Peas seasoned with Lemon Pepper
and drizzled in Olive Oil topped with Sweet 'n Hot Peppers, Deviled Baked Taters seasoned with Magic Dust,
and Pan Fried Corn Bread with rough chopped Sweet
Onion and Garlic Texas Pete added to the batter!!!
With a little Bourbon on the Side,(cuts through the edge!!!)

Hello to a Brother in Carolina!!! I learned a lot from your build, thanx!!
250 degrees still as we type...I'm letting it go until it burns out to see
the amount of time I have for future cooks....I really over did it
and loaded the whole 18 pound bag of charcoal this morning!!!
I also wanted to season it well and coated the inside with half a can
of Crisco and said,"What the fark!!!!" One does what one can....

Awesome Job! I want one of those toys! Everything look delicious!, I had my UDS on for about 12 hours, put in roughly 10 lbs of Rancher, 2 chunks of kiawe,3 chuncks of lychee... I have a little less than 1/2 of the charcoal left...

Sorry, different name, its mesquite wood, Lychee is a fruit tree, very hard...the smoke is really light taste!

The food looks awsome. Especially the pan-fried cornbread. How about posting your recipe for the cornbread? I'd love to try it.:lol:

Here it is:8348

2 cups yellow self rising corn meal
2 eggs
1 cup sweet milk
1 cup rough chopped sweet onion
12 dashes hot sauce, I use Garlic Texas Pete.
Mix together in large bowl, if dry add a little milk,
if too wet add a little corn meal, don't mix too much.
Heat 5 Tablespoons corn oil in frying pan, medium heat.
Test drop a small spoonful of mixture, If it sizzles right up
you're good to go.
I use a large stainless mixing spoon about 4 inches long
but you could use a 1/4 cup measuring cup to spoon the batter
into "dollops" roughly oval sized into the frying pan.
Don't crowd the pan!!! If about a ten inch round pan do just
three "dollops of batter at a time leaving plenty of room
between batter drops.
When you notice browning around the bottom edges and
bubbles barely coming and breaking the surface,about 4 minutes
give or take, carefully lift and turn over, being careful
not to splash hot oil.
Again, when you notice browning around the edges
cornbread is done. As the batches progress it may be necessary to add
more corn oil to pan.
Butter 'em up and enjoy!!!
