View Full Version : New UDS with Dr.BBQ & Paul Kirk on the same bill!

OK, I had to work this weekend and got up early to try out my latest UDS.
We had gotten some Party Wings from Costco and I decided to try them out with the Bayou Classic wing racks. I used the small fire basket in the drum and
rubbed the ones on the left with Sweeter Big Time and the center ones were sprinkled with Garlic salt and black pepper and the ones on the right have a PK rub on them. I used Lazarri Mesquite lump.

I thought I'd do a couple Papa Murphy's pizzas on the Big Green Egg, using Wicked Good Weekend Warrior with some Hickory chips on the side for a little smoke.

Would there have been enough heat from the UDS to cook the pizza after the wing?

No, I was cooking the wings at @ 240* using my small coal basket, it was a test run on the new drum. I'm reluctant to call it an Ugly Drum Smoker, because it's a brand new barrel, a guy used to store bottled water for Y2K and it took him this long to figure out the worlds still turning! $5!!

I've been drooling over Rick's and thirdeyes Egg pics, that I had to do something about it!

Roy- Those are the plated Bayou Classic racks and I got them at Lowes for @ $5, they fold up for storage. Northern Tool has the Stainless steel ones, there was a thread here a couple weeks ago. Check them out, they may still be on sale.

Lookin' good. I haven't done a triple rack cook yet, but one is coming. those suckers are really handy.

What was the pit temp and cook time for that pizza? We have a Pappa Murphy's here. I've had their garlic chicken with the white sauce, it's good.

Yessir you are correct! That is indeed a white garlic and chicken! 450* at the platesetter, @ 470* dome. I saw Ricks use of the feet between the stone and PS and was wishing I had a little more height. I'll start them off on the cardboard until the dough is able to slide onto the stone (with a little cornmeal) @ 18-20 minutes. They won't sell just the dough, but for Take 'n Bake they are the best!

I was disappointed in the size of wings, because they were all cut up in sections and frozen in lumps! They would be better suited deep fried or on a tray. They tasted great just over processed.
