View Full Version : Can you cook real Q on a horizontal drum smoker?

Yes. But here's what I learned. If you start too big a fire and have to use tongs to return some of the charcoal to chimney, 'cause the temperature is creeping up to about 400, don't set the chimney too close a plastic wheel.

Except for the mishap with the wheel the Boston Butt came out great. I suspected that it would be a good day when I found the right string end to pull and open the bag of charcoal with one pull, bringing the string sewing the bag closed, out in one piece. Now how often can you do that?

Food looks great and the smoker looks awesome. Sorry about the wheel though, how did that happen???

In "Legends of Texas Barbecue" Robb Walsh talks about Harley Goerlitz who has won more than 300 barbecue trophies and according to Harley is "The Winningist Barbecurer in Texas"

Harley says "Don't worry about buying a big fancy smoker. You can make great barbecue in a Weber, if you know what you are doing". As he was telling this to Robb, surrounded by huge fancy rigs worth thousands of dollars, Harley was competing on a $50 sawed in half oil drum.

So yes you can and, from those pictures, yes you did cook great cue on a "Texas Habachi" :mrgreen:

don't feel to bad about the wheel. I did the same thing only with my weed burner. I was cleaning off some grates with it and thought I was ok but didn't notice the flames were wrapping around the upright drum and melting one of the wheels. It made me be a lot more careful when using my weed burner.

But looks like you did a good job on the smoker and the meat.

Why not?....Time was that I used a '28 Plymouth...Now I use something different...:))
