I had planned to serve up some ABTs, pulled pork and smoked beans for supper today, but mu pork butt had other plans. The ABTs and beans came out great, but the butt is still cooking after 13 hours now. I moved it to the oven after 12 hours. The temp is at 168 now and climbing slowwwly. This is the longest smoke I have ever had. I know the meat is done when it's done....but jeez! On another note...I had a desert turtle show up this morning while I was warming up the smoker. He looked around a bit, figured I wasn't going to feed him, then he turned around and just left. Stangest thing I ever saw. Here's some food-porn of what I have so far....

Hmmm.....could be. Know any recipes for turtle?
Just kidding.....he wandered away and headed down the street last I saw him.

14 hours cooking now and still only at 176. It's going to be a late night.

Nice grub , I did a experiment last night I foiled the whole drip pan on my WSM , suprise I never had to reload any fuel after that. I started at 11PM and it never dropped a degree when I got it to 250 , its 8AM and it just spiked to 300 but thats ok , I adjusted the vents to compensate for that . Pics will come later this evening. I did 2 Butts all totaled 13.5 pounds together. Will take the butts of at 11AM foil em and but then in the cooler for a hour or so and then pull em. Yea I got before and after shots, LOL.

Well after total cooking time of 22 hours (12 in the smoker and 10 more in the oven at 200 degrees) The butt finally rendered out. I let it rest 3 more hours before I pulled it. We'll be eatin' this little piggy for a few days! :biggrin:
