Thanks Brandon, Vinny et al,
Yes, it looks to be the happening place to be tomorrow.
Looking forward to the gig and it should be fun for all who compete and or attend.
The car is loaded and all the provisions and secret ingredients are packed ready to go in the am.
The only things I don't have to bring are beans.
Be there or be square.
Wes

Notice in the first and second pic... that is me, MilitantSquatter, in the rear eating more of that green chili... could not get enough of it...

I was not part of the Red Hot Loco Peppers team, but by coincidence happened to wear a red Cookhouse shirt (BBQ joint in CT)...

Way to go man! You must have got the heat and flavor balanced just right. http://img.photobucket.com/albums/v377/thirdeye2/Misc/0e7b6d4c.gif

We always make an extra pound of the seasoned pork, it never makes it to the pot. With a few crackers on the side, it's one of my favorite snacks.

It's 1:30AM and I'm at work eating some chili a guy brought from home, who's idea of a good bowl of red is how NUCLEAR he can make it! I'm sure I'll pay for it later! Thanks for the pics you guys, it looks like you all had a great time.

When i make this again i would definately take your advice and add pototoes to make it like a stew. That seasoned pork is a meal all in itself. Thanks again

Just for the record i actually tied for first place but the tie breaker went to the other guy. We both ended up with 20 points, we do not get a score sheet like in kcbs. The real nice thing they do with ICS is each judge has to give a comment and we get to read them at the end. I would LOVE if KCBS did that so you can see where you went wrong or right. People gave comments like great taste, consistency need more heat etc. You would figure with all the money we spend you could get feedback like that in BBQ instead of wondering why did some ash-hole give you a 7-6-6 another 9-9-8 so we can better improve ourselves. Maybe i can move up a spot from 13th place chicken that way

If you are serving up the whole pot, add potatoes toward the end of the cook, (or even on the side). If you are not serving the whole pot, you run the risk of the remaining potatoes breaking down and thickening the chili.

I make large batches at home, some for a chili fix for friends, and the rest for the freezer. Most is frozen as-is, we add potatoes to several containers and there is usually enough of the base (with little or no meat) to package a couple of containers of "green sauce" that I like for enchiladas.

Anyhow, you done good. When you want to move on to tamales, give me a holler.
