View Full Version : Mother's day chicken ideas

I've got a couple of whole chickens and wanted to smoke up something extra good for my wife and kids tomorrow for mothers day. Ya got any good recipes or rub recipes for me? I can do 'em split/whole/quartered, whatever, no real preference. I'll be cooking them in the GOSM with apple and cherry.

Here's a recipe that I really like. Make the marinade today and put the chicks in the fridge overnight.

16oz cider vinegar
about 4oz tomato paste (2/3 of one of those little cans)
2Tbspns peanut oil
1 Tbspn A-1 (or your favorite steak sauce)
1Tbspn Worcestershire sauce
1Tbspn your favorite hot sauce
2Tbspn sugar
2Tbpsn kosher salt.
Put all of it in a saucepan and simmer for 5-10 minutes. Let it cool and put the chicken in a gallon bag to marinade overnight.

It isn't overpowering with any of the flavors, and isn't hot. I guess habenaro hot sauce would fire it up, but not for Mama's Day. It should work for both chicks if you use half of it on each bird. It's usually my wife's favorite marinade.

Just a thought.

That marinade sounds good, Adrian. I may have to try it one day.

bertlemtncurs... For presentation I would suggest spatchcocking (butterflying) the chickies. It makes a very cool presentation

It's easy to do. Just use kitchen or poultry shears to cut out the back bone ande then use your thumbs to remove the keel bone between the breasts (and the cartilage attached to it) and the bird will lay out for you.
