View Full Version : 1st overnighter w/ the WSM

I'm finally comfy with the WSM so I'm attempting my first overnighter with a 7lb butt.

The BBQ Gods seems to be against me (check out this thread: http://www.bbq-brethren.com/forum/showthread.php?t=27032 ) but I don't believe in God, so..... :wink:

Despite the spiritual confusion, I'm off to a roaring start. I'll let you know how it goes. The below butt is slathered and rubbed and ready to go...

No way, sucka. I'm keepin the temps low in the beginning because I don't want this to happen. My goal is to have an ample supply of bomb-ass sammies for lunch. Thanks for the encouraging words, though, Mr. Mod #2.

I'll keep the bretheren posted...

I've got 17 lbs of butts that will go on the WSM in the morning. Very low, very slow, so I have lunches for the next week or two.
Also gonna use some of that pork to make Keri Cs apple baked beans. Can't wait! Oh yeah, gonna smoke some Hebrew National kosher franks too

Trust your machine because that's what you have. Take 45 minutes or so to peg your intial temp and let your machine take over from there. Rest well

I slept well. Didn't check on it once overnight. I wake up this morning to give her a look and it's cruising at 222. I love this thing!

The butt is at 160. Looks like we're on pace for a lunchtime finish!

Way to go bro... I know the feeling!!! When I did my first overnighter with the UDS I felt like I was cheating.

That is the best bean recipe I have tried! I really like it with a fatty crumbled into it but pulled pork would be good, too! If you haven't made it before, add the cayenne pepper a little at a time. the amount that Keri shows in the recipe made beans that were too hot for anyone in the family except me!

LOL, I'm doing my first smoke on mine right now with a couple racks of BBs. I keep jumping up to check the temp by habit, ready to adjust things. and there is nothing to do -- right on temp. I feel like I need to go touch it to make sure the thermometer isn't stuck or something. Eerie feeling.
