Seriously, take the thighs to 165-170. However long it takes.

I usually go about 3 hours on chicken...pieces too, if I'm cooking slow. The big thing is getting it done -- 165 in the thigh (or thickest part of the bird).

yeah, at 225, start checking at 3 hours.

BUt..

I like cooking the breasts seperate becase they are done sooner. do u NEED to keep them whole half chickens or can they be wing/boob and leg thigh.??

That's what they wanted. May get a bit of a dry breast, but I'll glaze them and the drunken Jaycees I'm serving will love them.

I did the Big Bob Gibbson Recipe in "Peace, Love & Barbecue" last weekend.
1/2 chickens rubbed only with salt & pepper smoked at 250* - 300* for about 3 hours. Brushed with vegetable oil and sprinkled with more salt & pepper 1/2 way thru the cook. Used Hickory & cherry wood. Then dunked them in the White Barbecue Sauce. The breast were still quite moist.

The crowd went Farkin Wild!

There's more than one way to skin a cat. These are 1/2 chickens and the breasts never get dry and the dark meat comes out just right.

Back to pork steaks. They have more fat content than center cut or pork loin chops and are usually a whole lot cheaper. I cook them on direct heat just long enough to get the grill marks on them, move them off to the side of the grill and close the lid. Let them cook at about 250-300 degrees until done. Here in North central Texas, we slice them in strips and put them on warm tortilla's (flour or corn) with Cholula hot sauce and sliced avacado and enjoy. No plates or utencils neccassary. Now, as for thw Weber kettle grill is concerned, it was the first grill I ever owned. I have only had two in the last 15 years. It is simpley the best BBQ grill made. Once I started gettin' serious about BBQ'n, I bought an Oklahoma Joe Smoker (I now have two) and started really concentrating on brisket and pork butts, but I use the Weber for just about everything else. Both my brother-in-law and my father-in-law are big BBq'ers and they both have Webers as well. I hope this helps and try those pork steaks and let me know what you think. Later, Chief
