View Full Version : Which meat takes most skill to cook/score high with?

I was pondering the issue and thought I would ask the pros.
What of the four KCBS meats takes the most skill to score high with?
From a naive perspective, it seems that pulled pork would be the easiest to cook, but tougher to score high in because the other entries would be so close together in quality. This would leave presentation as the separater.
On the other end, it seems that Ribs are the most difficult to do perfectly, so there would be a more natural separation for judging.
I bet I'm all wet on these thoughts - would love to hear what you guys think.

I would say brisket is the toughest to master on a consistant level.

I'm going to go against that and say chicken... smaller pieces of meat, hard to deal with skin at times... Just my opinion; I seem to do brisket decently, and we've pretty much continually moved up the rankings with brisket.

I vote for brisket. Each one is SO different and if you don't cook it right the judges will let you know it, and the tenderness counts the most!

I've never made a tough brisket. I've overcooked one and had it crumbling on the ends though. I would probably say chicken because you have to sacrifice pieces to see if they're done. And don't get me started on the skin issue.
For me its pork. I cook good pork its a favorite with friend and family but for judging I never do walking good. Brisket and ribs are the easiest for me.

The brisket is most challenging in my opinion and I can appreciate votes for the chicken due to the special prep involved.

I say brisket is the toughest....At least with chicken you can cook a bunch and pick out the best prior to turn in.

We were just talking about this yesterday. I think brisket is the toughest category to score high in but it's the easiest to place high in. At a contest with 40 teams probably 25 will cook a bad brisket and not know how to salvage it. That leaves the top 15 to the teams that cook or know how to get a decent score out of a brisket.
I think the toughest category to place in is rib's. Most everyone will cook a decent rib and most judges favorite category is ribs. There always seems to be a bunch at the top.
At a large contest don't compact the top scores but the 10th, 15th or 25th place score.

I think brisket and pork are the easiest because there is some leway in cooking time. If your run a little long it isnt gonna ruin those pieces of meat. In my opinion I think ribs are the hardest to master followed closely by chicken.

I have a hard time with chicken and it showed this past weekend at my first comp. I took 2nd in brisket, 2nd in pork, 3rd in ribs, and DEAD LAST in chicken!!!!

For me it's chicken. Rio Rancho....2nd chicken(48 teams) The Autry....26th chicken(32 teams)

I 30th Brisket, that is one tough piece to cook right. I've only been happy w/ one brisket I've done. I leave that to another team member. I think ribs are the funnest to cook cause you get to eat em faster.

For us, it's been ribs. I can't say they've hurt us as far as getting a GC but I'm positive that last year we could have gotten at least a RGC had our ribs not sucked! We got several TOY points in every category, including overall... we got nodda point one in ribs all year long. They killed us!

Rich that is a good point as said before. Never thought about it that way. Birds and fish are the only turn ins that seems real easy to us. We are tough to beat at catfish festivals.
