I was just taking a look at this book.

An interesting list at the end of the book names restaurants in a given city that you would combine for a dream meal. In Memphis the author picked the following.
Main #1 Payne's BBQ-Pork Sandwich with Slaw
Main #2 Double J's Smokehouse & Saloon-Ribs
Side #1 One & Only BBQ-Twice Baked Potato Salad
Side #2 Central BBQ-Nachos
Sauce- Double J's Smokehouse & Saloon-Mustard Sauce
Drink-Ghost River beer
Restaurant to eat it in- The Rendevous

I'll bite, but using all of North Carolina:

Appetizer #1 - Pork skins - Memphis Barbecue Company in Fayetteville
Appetizer #2 - Cheese balls - Memphis Barbecue Company in Fayetteville
Main #1 - Chopped pork - Skylight Inn BBQ - Ayden
Main #2 - Brisket - Clyde Coopers BBQ - Raleigh
Side #1 - Roasted Brussel Sprouts - The PIT - Raleigh (no longer offers these delicacies)
Side #2 - Brunswick Stew - Smithfields Chicken & BBQ - all over eastern NC
Hushpuppies - Doug Sauls BBQ & Seafood - Nashville
Sauce - my father-in-law's!
Drink - Cheerwine
Restaurant to eat it in - Clyde Coopers (with their "Big Ass Fan"!)

Why the Rendezvous? The wait staff are trying to get you in and out as FAST as possible, and can be somewhat pushy about it. Not exactly a leisurely experience for a large meal like that.

Main dish 1- Crown Beef Rib- JackStack in KC
Main dish 2- Z-Man Sandwich- Joes KC BBQ
Main dish 3- Spare ribs- Q Barbecue- Richmond VA
Side dish 1- Cheesy Potatoes- JackStack in KC
Side dish 2- Baked Beans- Bub-Ba-Q Marietta GA
Dessert- Banana Pudding- Q Barbecue- Richmond VA

You would have to ask the author but it's probably the history that goes along with the Rendevous. Princes, Princesses, Rock Stars, Presidents of the United States all have to make for good stories. The staff,many having been there for 40 years just add to the history.

I concur.

Apparently so does the guy that made the list. All the food comes from elsewhere. Nothing from Vergos' place is on the menu.
