The tri-tip is done....I decided to throw it in the bottom of the Bandera while the rest was cooking.....so tender you could cut it with a spoon....

I have to say that elk is about my favorite meat. Cowboy cut elk chops would be my choice for a last meal... well, maybe tomato soup with a fork, but you know what I mean!
