I have a relatively large supply of black walnut logs from a tree that was taken down about two years ago. What kind of meats would go good with walnut? I wanna use this stuff up. Any suggestions?

Speaking of black walnut trees. I have these effen things all over my yard. And if you don’t know about these trees, they're killers. In a few more weeks they will start dropping there crab apple size green husk covered nuts, when unripe they are hard as rocks. When falling from a 50 ft. tree can really hurt. They dented the b’jesus out of my car 2 years ago:mad: . Good thing insurance covered it. Still cost me 250 in a deductible. I had to buy 2 car ports to park the cars in to keep this from happening again. And when they really start coming down, like in heavy winds. It’s like a rock shower.

Sorry, just my little rant about black walnut tress.

WALNUT - ENGLISH and BLACK - Very heavy smoke flavor, usually mixed with lighter woods like almond, pear or apple. Can be bitter if used alone. Good with red meats and game.

We have the same problem with hickory nuts....them suckers are rock hard ALL the time. We used to live in a mobile home under a few of those trees too.....on a quiet night you'd just about be asleep and WHAM! one would hit the tin roof right over your head.

My parents had 7 black walnut trees when I was growing up. Them suckers would bring you to your knees when you got hit in the ankle mowing lawn.

Black Walnut Can Be Very Over Powering Use It Spareingly.
I Have Not Had Good Luck With It. But You Mint.

I don't suspect that walnut is much good for smoking, but if you have any friends or aquaintances who are woodworkers/woodcarvers you could make yourself very popular with them by offering them a few of the logs.

Out here in Arizona (where there isn't much in the way of decorative hardwood growing -- cacti aren't hardwoods) we pay for such woods, and pay dearly for good stuff.

Check the internet for a Wood Turners Club near. If it gets around that you have black walnut trees you need to take down you will have people coming out of the woodwork. Walnut is not the best wood to smoke with.

Well I think My landlord would be a little pissed if she showed up and the trees were gone

Thanks for the question nonthink. I have a hefty block that I've been hanging on to, afraid to chunk it and throw it in the smoker. Now I'll have to try. I grew up with these ankle breakers too, Mom and Dad used to plant a garden under them, only thing that grew was zuchinni. In the fall there'd be so damn many nuts on the ground you couldn't walk.

When they really start coming down, I don’t let my children play outside. If I need something outside I’ll put on my 4 yr olds toy fire helmet. I know it looks stupid. But I figured if they can dent up a car, I can only imagine what they can do to my head.

Oh yeah...did I forget to say there are a couple Black Walnut trees in my Mom's yard too? Those nuts are a pain. She decided it was time to clean thos things up and wanted me to go find a "nut picker-upper" ...what I found was a spring loaded dog pooper scooper that has jaws that clamp the nuts in like the old crane buckets. its only plastic but it does a reasonable job...and no bending over to pick up each individual one.
