View Full Version : It's official....my 1st POST!

Hello everyone, I am the newest member of the BBQ Brethren!

After years of eating friends and family's mediocre BBQ I decided to take the plunge and purchase my first smoker. I am now, totally addicted to the sweet art of slow cooked Q.

With 4 slabs of ribs and a pork butt under my belt thus far I now feel somewhat prepared for the upcoming football season. My problem, as many Bandera owners have had, is that I have had to use waaaay to much fuel over a 6-10 hour period due to the design of the firebox on the Bandera. My quest to mod the Bandera to make it as efficient as possible led me to various websites and the name Spice kept being thrown around. Needless to say Spice is the member that led me to the Brethren. Big shout to him for helping a lost rookie BBQ'er find his home.

This is a great forum/website and I am proud to be a member of the BBQ BRETHREN!

Welcome! I spent 3 yrs. in Moore when I was growing up and loved it. My folks got me back to Texas just in time:lol:

Did college in Big D and need not tell you about UT/OU weekend.

Thanks for the warm welcome. I now know what the common ground between Sooner fans and Longhorn fans is - BBQ!

Arlin, the first time I used the 'Dera it was without mods and I used two chimney loads of charcoal and a few pieces of hickory wood thinking this would get me through 4-6 hrs. of smoking (baby back ribs). It only lasted 3 hrs. with the top and side baffles 100% open, temp was good, about 250 degrees until it hit the three hour mark and I noticed the temp was falling fast. I loaded another chimney of charcoal to get me through the five hour mark. Ribs were tender and excellent even without the baffle and firegrate mod.

I then did the baffle and the firegrate mod and tried a small pork butt. It went eight hours and came out great, but since the new firegrate was elevated and had more airflow it burned very quickly, I must have gone through six chimney loads of charcoal that day to keep the temp in the 225 range. BTW, it was 103 outside the day I did the pork butt! I was using an apple juice spray for the butt and cold water mister for my face as well as a cold pac for my neck and cold beer all day long. Nothing like outdoor BBQ'ing mid-summer in Oklahoma.

If you have any suggestions or recommendations as to how to keep the temp more constant for a longer period - I am all ears.
