Dear All,
last saturday and sunday we had the first KCBS contest in Italy, the Italian Barbecue Championship,
with our team, the Southern BBQ Wars Team!

chicken 9 although a little light, could see someone giving an 8
ribs 9 all day long
pork 8, perhaps even a 7. need more pork in here to cover that garnish. The pulled pieces look frayed and the MM looks dry
brisket between 8 and 9, starting to look dry, but no so dry that I'd really count off, so it's a 9

Keep in mind that while I am a KCBS CBJ I primarily compete so my feedback comes from more of a cooks perspective and how I look at pictures of my boxes that I over analyze :crazy:

Chicken 9: Love the color and very even glaze/sauce. With all the time in the world to look at it and over analyze watch for the rounded corners where 1 or 2 corners kind of throws off the symmetry. And that bottom left piece is a lot bigger than the others.

Ribs 9: The color is again dead on and not over sauced. I can't tell you how much I like this color. Over analyzing I'd say just watch for the alignment of putting them in the box. Hard to find something wrong with this one.

Pork 8: Those slices are nice and even and have good color, but looks like it could use a spritz of something at the end to give them a shine or a thinned down sauce for shine. Those pulled pieces look unevenly sauced, but still good. And the meat looks set down a little in the parsley. Get it more on top.

Brisket 8: Very well organized, but those slices need some shine from au jus or a spritz of water. Also they look to be sitting down in the parsley. Over analyzing I say watch for the spacing between the slices. Sometimes the left side is lower than the previous slice and sometimes the right side is a little lower.

I really want a bite of everything here :biggrin1:. Looks awesome!

Chicken 8 or 9. The lower left piece is bigger and the bottom middle looks a little under sauced compared to the others.

Ribs 9 Looks great

Pork 8 The meat looks like it got lost in the garnish.

Brisket 8 or 9. I little au jus would eliminate an thought that it is dry. Also the symentry of the slices is off a little bit. Burnt ends look great.

Chicken = 9

Comments
chicken = try to place the chicken pieces next to other chicken pieces of the same size and shape (the front left thigh looks big compared to the one next to it)
Ribs = looks a bit crowded - perhaps try a 3 on 4 arrangement so that the box looks better - the ribs themselves look great
Pork = MM looks excellent but the pulled looks too thin - add more pulled
Brisket = looks a wee bit dry, but I'm still wanting some!!!

How did these boxes score in the competition???

While I usually get get caught up in difference in sizes of thighs, the front left one did take/draw my eyes from the whole box. Like Tom said, put the large pieces in the back and the smaller in the front. Pork and brisket looked dry, the brisket might have been a nine when looking at it live.

Chicken - 9. Amount of sauce is spot on as is the shine. I like the arrangement and the thighs look like thighs not clones.

Ribs - Solid 8, most likely a 9 in person. I see some inconsistencies in the color and arrangemet, and some areas of heavier sauce.

Pork - 7/8. Arrangement of the MM could be better, portions of the pulled is on the small side. The pulled could also benefit from a spray.

Brisket - 8. I like the BE's but the slices look a little dry. That said, brisket is one of the hardest turn-in's to photograph... they always look better in person.

Beautiful boxes for a first contest! You have gotten very good advice above regarding the appearance of each of the meats. The one thing I would add is that although you have beautiful garnish, it would be good to make it lower and tighter in the box, like a little carpet in the bottom and not crawling up the sides, so that the meat is sitting right on top of it and catches the eye.

I hope you enjoy many more contests, you are off to a great start!

I'm sorry, but I'm absolutely dumbfounded as to how you can rate the entry on the left an 8, and rate the entry on the right, from another thread, a 7??

The KCBS judging scale runs from 2-9, there has to be more than 1 point difference between the appearance of these 2 boxes. There just has to be...

I completely understand the chicken scores.

Ribs, I think you were robbed. I would've thought 889999 at the worst, with me looking at those 8's asking the judge "are we judging appearance and how appetizing it is, or are you nit-picking?". The 7, IMHO, is craziness. Then again, there's always 1 yahoo in the bunch...

Pork, you benefited IMHO. I would've thought 777788, perhaps a rogue 6 or 9.

Brisket, I understand that, a bit tough. I was borderline myself, and any time I'm borderline, I always give the benefit of doubt to the cook...

Chicken - 9 (Although I agree with some about the one thigh being a bit large. There would probably be some 8s).

Ribs - 8; Perhaps it's perspective, but the two perpendicular ribs look smaller than the other five.

Pork - 9; Unlike some others, I find this layout very clean and appealing.

Brisket - It's hard to say from the photo. I'm inclined to give an 8 because it does look to be drying out, but I'd really want to see it in person.

As for that one box Smokedelic posted along with yours - that's a 5.

1st box is probably a 9, while not exactly excellent in layout I cannot see anything that requires a deduction.
2nd box is definatly a 5, looks just thrown in the box with no thought to continuity or making the dry chunks of meat look appetizing.

KCBS needs to emphasize that all scores of 2 thru 9 can and should be used. I think one of the biggest problems today is score creep. I've seen many,many boxes given a 7 that were most definatly not "above average".

A great share of this problem goes to Reps and CBJ instructors that promote these 2 ideas,
1. Cooks spend a great deal of money, yada,yada,yada.
2. A 7 virtually knocks a cook out of winning.

At my last contest I used scores of 5 (2) to 9 (over 12 ish) and yes the 5's got comment cards.
