I'm just wondering if anyone one here has cooked in these comps and if so how do they differ from kcbs? I have only cooked in kcbs but there are St. Louis bbq society comps closer and just wasn't sure how they are.

I have cooked several. They usually do the same meats and will generally follow the same turn in times as KCBS. The biggest obstacle is dealing with the county health department as they come around and check your site (if comp is in STL County). If you are found to not be compliant with their rules, you could be shut down. There are some great teams in STL and the cooks are all fun and friendly people.
