So, who is doing PC at BBQFest? Have you had the numerous phone calls from the Health Department asking for everything except your first born? I thought since this was on Mohegan Casino tribal property that PC and the HD was going to be easy. Wrong!

When I signed up, I was told that People's Choice was going to be easy, no worries. Once I signed up, I got the email that said, now that you are signed up here is the form for the health department. 3 pages to fill out with 5 pages of instructions! Then a call from the HD asking a bunch of questions about sourcing (that I answered on the app:doh:), cooking procedures (ditto:doh:) and if I have a SafeServ certification (a requirement for this competition).

I faxed my SafeServ license and got another voicemail Friday from the HD saying they wanted to ask me some questions about food handling safety, holding temps and some other questions. Isn't that what the SafeServ Cert if for?

I have a headache from all of the head slaps!

More and more comps are wanting teams to get involved in people's choice for obvious reasons, revenue for the comp, attendee involvement, etc. Comps need PC to keep going in my opinion and I am glad to do it when I have the manpower, but these local regs are going to start killing comps in my opinion!

Just this past weekend at Que for the Troops in Levittown, the PC was cancelled because the organizer said that the Health Department was going ballistic about it and just made it too difficult to put on.

Would like to hear if anyone else is doing PC at Mohegan and what your thoughts are on my rant.

Jumping off of the soapbox! Have a great week!

Apparently we all have to fill that form out by today regardless of if we are involved in PC's or not. I just read the letter they sent us last week and we are all being issued HD temp permits. I didn't see anything about this when I signed up and honestly I probably wouldn't have signed up if I knew the HD was going to be this involved.

Is it normal in CT for this much involvement?

No...We have competed in New London, Westport, Stamford and Norwalk and have never had to fill out forms for the KCBS portion. Even doing peoples choice in Norwalk the inspector came around to check dishwashing stations, ph strips etc but that was about it.

Just talked to Arlie and apparently the SafeServ is a requirement for all at the moment, but they are trying to work that out and remove that requirement.

Quick Update: Called Samantha the onsite person and she said that they are only requiring SafeServ cert for teams that are vending and there are only five of them. They are working intensely with the HD to get them to ease up and relax on their harassment of teams that are only cooking the KCBS contest portion of the comp. A hand washing and dish washing station is being provided by the casino for our use. She said if anyone has questions to give her a call.

Guys we are having a meeting today and it looks as if only the teams selling full plates to the public with have to have the SafeServ. This is 5 teams at the time and all are good with that. I will update you all this evening!

Thanks

Arlie

Even after talking to Samantha I'm still on the verge of withdrawing- there is enough going on cooking a contest without having the potential of the HD breathing down your neck and it sounds like they have been harassing even teams that aren't vending. It would be one thing if I was warned about these issues prior to signing up but I wasn't. I would have skipped this contest and sent my money elsewhere.

My question is this: why are we required to fill out a detailed food handling form even if we aren't vending to the public? Am I expected to be held to the HD's standards for hand washing station, holding, etc? If not then why even bother with the form and an onsite inspection and temp permitting process? I have only cooked like 12 contests and have never filled out a HD form or had any sort of onsite inspection other then meat inspection.

I vend almost every weekend. I think you are looking way too far into this. Just show up and do your thing. On another note you should hold yourself to high sanitary standards. Handwash in my opinion should be the number one rule in the KCBS site inspection, it boggles my mind there isnt one.

Arlie - I hope you have me listed as one of those vendors. I haven't received anything about the HD.

This is a case of the Health Department trying to extend their reach by fiat. KCBS judging is considered a private party and the HD has no jurisdiction over private parties. The Carol County MD HD tried this at the Mt. Airy competition a few years ago. They claimed that because the event was charging admission the judge's were considered attendees and thus the teams were all subject to HD over site. It killed the comp.

We're going to see more and more of this as cash starved local governments see a potential revenue source in temporary HD certificates.

Be prepared to provide ground cover, elevated food storage (no coolers on the ground) and no food prep permitted in RV's.

Tired of the health department run around and the 1099 requirement? The Old Orchard Beach contest is 2.5 hours away on the same weekend, and it's an auto for The Jack. You just know the health department is going to be all over you at Mohegan.

We don't see this in most contests in CT, but in Norwalk (which also had a lot of People's Choice) they were grilling our dishwasher about water temps, the sanitizer to fluid ratio, refresh times for the sanitizer, etc. It's a good thing my brother in law was there that day, he's a professional chef and a ServSafe Certified Food Manager. Be prepared to get quizzed. They weren't just checking, they wanted you to demonstrate knowledge of ServSafe approved procedures.

It killed the comp.

What killed that comp was setting up teams on the side of steep grade, poor prize pool, and poor support to the teams. OH, and the price gouging on ice..........$12 for 10lb bag.........

Wow, even Merrimack doesn't charge that much for ice.

For queforthetroops it was easier to just kill the people's choice rather than deal with the crap they wanted to put myself and everyone participating in PC through. It's a shame because I had a guy donating the pork butts.

I'm going. I'm going to be in compliance with all KCBS rules and regs and count on Arlie to get the rest all sorted out.

I really get a kick out of people.......

Look for a bourbon brisket challenge soon.

I can think of approximately 19,000 more reasons to put up with the BS in CT than to drive 3 more hours to OOB.

The worst health department harassing was last year in Fredricksburg va the guy would not leave me alone about 40min I had everything set up good and clean. But I think Mohegan sun will be no problem they just want to make sure you know what you are doing after all you are feeding the public plus we keep the money. We have been waiting for this type of set up for years.... This is what the people want when they get there your samples from real teams fireworks, good prize money and they want to make this better and better every year plus the backing of Mohegan sun priceless...... I filled out the forms and it was your basic questions and the cost of a stamp ........ EAT AT JACKOS

They have..... Lobster... King crab..... Prime rib...etc... Etc check out their web site..... I think it is around 90 dollars but for the quality I think it is worth........Eat AT JACKOS

Forget the HD, I cant even get confirmation we are in. We paid and everything, planned on vending, gave a credit card, they never got back to us or charged the card. Still trying to get a hold of them. Anyone have any contacts?
