Hello Everyone from Minot ND,
Received a little Cajun Injector Electric Smoker for Christmas. Have not ever smoked anything before but wanted to try it out after watching all the cool shows on t.v. Opened it up for the 1st time on Saturday( We did have an inch of snow again at the beginning of May). After curing the smoker we did a quick little half hour smoke on some crab legs. Turned out really great. For Mother's Day I tried to do 2 racks of pork baby back ribs and 2 tri tip roasts as well as some corn on the cob. Had great luck with the tri tip. Threw em in for 3 hours at 225 and kept the mesquite chips going the whole time. Another great smoke. Great corn. Smoked for 75 minutes in husks. Awsome. Struggled with the ribs. kept them at 225 whole time. Put them directly on a rack and smoked for 90 minutes, wrapped with honey and brown sugar in foil for next 3 hours. Took out of foil and put bbq sauce on them for 30 minutes back in the smoker. Turned out good for tenderness, however was very bitter. Over smoked them maybe? Will definitely need help to figure that out for next time. Overall great 1st weekend with the little smoker for a definite rookie.

Welcome! It's all about practice. Bitterness is almost always from the type of smoke your creating and/or the length of time your adding wood to your coals. White smoke = bad, blue smoke = good. There are so many Bretheren here that will give you tips on producing quality que. Browse the forums for TONS of advise.
