I registered here a little over a year ago after a friend on another forum pointed me in this direction. I was "thinking" about building an UDS. Then something distracted me and I forgot about it.

Yesterday I secured a 55 gallon drum and a charcoal basket big enough to hold 20# of charcoal. Looks like I'm here to stay now so I figured I might want to introduce myself.

I've been cooking all my life, both inside and outside. When cooking outside, it's usually a large pot or 3 of jambalaya, boiled crawfish or an occasional whole pig in a Cajun microwave. In addition, from time to time I do small catering gigs.

A few months a go a friend loaned me his electric smoker so I could smoke a turkey this past Thanksgiving. Up until then, in terms of BBQ, I was really a griller. When I ate the turkey it was an "Oh C**p what have I been missing" moment. Since then I've used the smoker about once a month.

Yesterday, I decided that I needed the real deal. So here I am.
