Hi all the name is Kyle and while I'm not new to smoking I am new to doing it the right way, and it's all thanks to the wonderful brethren of the smoke. I am a die hard U.T. Longhorn fan living in Anchorage, Ak 99507 and I'm the only crazy farker I know grilling all winter long although smoking presents a whole new set of challenges when it's -30 outside. Thank you all and I can't wait to learn everything I can absorb in one lifetime here, although I am trying to figure out what to post about since it seems all I have to do is search and I find a wealth of knowledge on any possible subject I could have questions about. Btw I use a Oklahoma joes longhorn offset smoker, but I hope to figure out how to build my own. Hey there's my first (well 2nd) post.

All I wanted before was the thickest willie nelson cloud of smoke and since finding this site I have already learned so much and went from an over cooked way over smoked brisket to what I consider an excellent brisket just in a few short weeks. Now I have enough faith to attempt my first pulled pork.... After some more research on recipes and best techniques. I just got my maverick et733 in today and can not wait to try it out on my first pulled pork

If you've got a good handle on brisket, my experience says you'll rock the pork butt. :clap2:
