Cooked for a group of 80 yesterday. We had pulled pork, beans, coleslaw, and chips. We had some beans left over and a lot more coleslaw. I figured 4oz portions of each for the plates.
My beans were good and the coleslaw was too. We actually had more compliments on the coleslaw.
Question - do you always figure the quantities as equal on all your sides?

no matter how you figure every party targets a different side. I have had cole slaw wiped out, then next week nobody even tried it. The only thing that stays the same is the mac n cheese, that always will go..Even when you do the same party next year...just be sure you have enough, maybe adjust your notes for items that go or dont go for next year. but I just dont inderstand some times..

I've found with my slaw that there is a lot of difference between the volume in a 4 oz disher and 4 oz of slaw. I cut my serving by weight back to 2.5 - 3 oz and it takes up the same space as 4 oz of p-salad or beans. Also slaw cane be a seasonal side up here.
