I was watching Food Network just now and it was the Memphis in May BBQ show... They showed a quick 5 second shot of Chris Lilly of Big Bob Gibson's injecting pork shoulder with a syringe filled with fluid...
He was injecting the pork shoulder but not in the usual style of inject needle and then slowly withdraw as you push in fluid as you always hear about..It literally looked like he was stabbing the hell out of it, with extremely rapid fire stabs...looked so quick that it would seem impossible to get fluid in as it needle came out as soon as it went in, onto the next stab.
Has anyone seen this type of injecting from a seasoned cook ? Is this just more of being really good with lots of practice ?
