just wanted to know if anyone sauces there ribs and lets the sauce set and right before turning puts more of a glaze on the ribs. I really don't know what the difference between a finishing glaze and a sauce would be if there is not someone out there doing this process.

Yes. Most use the process.
Sauce is sauce.
Glaze is thinned down sauce. ;)

Texas Pepper Jelly Rib Candy or sometimes I just use honey after the sauce is set.

I was wondering if people just used some type of thinned out honey, but Rib candy makes sense as well.
