what are the pro and cons of it. I have used it on my ribs . let it stand for 10 minutes then rinse it off well. It ruin them.

Accent is basically msg, tender quick is a curing salt...for making corned beef and stuff. See the link for more info. There's also been some discussion on the site if you search for it.

Tender Quick is salt with sugar, sodium nitrate and sodium nitrite added for curing purposes. I use it for making summer sausage. It turns the beef a red color. I think that's why some use it, to simulate a smoke ring. Adds nothing to the taste of the Q'd meat except salt as far as I can tell.
