View Full Version : NY Area Teams

Would you be interested in participating in a practice cook this fall/winter where I provide trained judges and you turned in food that was scored BUT everything else is completely up to you?

For example, if the cooks wanted we could set it up where each team turns in 3 boxes of ribs, each with a different style so they can get feedback on what direction to take or we could create custom feedback cards that the judges would use or each team could have 5 minutes with the judges after their turn-ins.

Obviously there would be no charge (although I'd probably make the judges bring canned food as usual and we'd donate it to a foodbank) and all the parameters would be set by the teams (times, physical set ups, etc.).

I would get 6 or 12 of our most experienced judges, depending on the amount of cooks that are interested. I can't imagine that it would cost the teams anything aside from the food, fuel, time and energy. Maybe an extra few ribs if I have to get someone to act as table captains or help w/ turn-ins.

To be clear, this is just an idea that I'm wondering about. Certainly nothing more than that at this point.

I think if it's going to be just a one day thing, we could do chicken and ribs?? I know I have been thinking about doing some different things with chicken!!

This is all very theoretical.

We would need to get a location first and the WilliePallooza venue isn't an option. For something this simple, we could use an office building or something similar on a Saturday.

Do any Long Islanders have access to something like that?

How much would it cost us for the Maples for a day or maybe one of the vineyards on the North Fork?

i'm almost wrapped up with the deal on my store, the parking lot across the street is big, and dead. Might be a viable option. For any teams that don't know me, I live in wading river, 5 minutes from the maples

I'm new to BBQ'ing and I have thought of entering a comp. but was afraid of getting my butt handed to me. What I mean by that is that what I thought was some good eating and the judges scored me DFL. I think this would be a great idea for the newbe as well. An opportunity to learn from somebody who's been there already.

motoeric

Well, it seems that we certainly have interest. The only hurdle would be a location.

We need to have an outdoor area where folks can cook, coupled with a room for the judges.

I don't know about the Maples and I'm not sure about a winery, but both of those would cost money and I'm trying to keep this as cheap as possible for the teams.

Does anyone own or have the use of a building in central Long Island where we could use the parking lot and a single room? Preferably a building with wifi and that has excess peanut M&M's? And maybe attractive belly dancers?

Ok, some of those aren't strictly necessary.

Patrick has kindly offered the use of his storefront for the judging (and bathroom facilities) and there is an open space across the street for the cooks.

He is in Wading River which is on the north shore of Long Island at about exit 68 or so on the LIE.

If anyone else has any location leads, please chime in.

Obviously we would have to do this on a Saturday or Sunday.

I'd recruit judges that have a minimum of say 15 contests under their belts.

The week before Thanksgiving is out and so is Dec. 21st.

Would Nov. 30th work for people?

Well that was quick!

I stepped out to do some shopping, but before I left I sent an email to the judges list. When I got home I had a full table of 6, with everyone having judged at least 15 contests. The table consists of at least one master judge and one master table captain (not sure if that's the right term).

I have a 7th judge who has judged 12 contests to act as a table captain.

What categories do people want to cook? You aren't cooking against one another, so it doesn't have to all be the same category.

If people want to turn in brisket or pork, I would schedule the judges to come in in the late afternoon.

I like the date as it's early enough to avoid snow and severe weather. I dislike like it as it's so close to Thanksgiving and all of the requisite shopping traffic.

im in too

30th is bad weekend for me too.. T-day weekend is family stuff..

i have options for venues too if we cant get or do pats but i think a place with bacon is preferential. :)

just and comment... Since its not a competition, and im not sure if your lookign to make this 2 days, but if someone wants to do pork or brisket, they can start it offsite and finish onsite or reheat if they dare.

I would also encourage the judges to fraternize with the cooks. (prohibited in comps)
That way they also get a better look at the other side.
The few times I have judged it always seems that the cook side is alien to many judges.

motoeric
11-05-2013, 03:53 PM
I'm absolutely not married to the 30th. Patrick is checking w/ the town to verify that we can use the parking lot across the street from his place.

If we had more options for a venue, it would increase our chances to make this work.

Please post dates that work for you and venue ideas.

I'm pretty much open for any day with the exception of Thanksgiving, the day before Thanksgiving, Christmas Eve, Christmas, dec. 21 and New Years.

It seems like the 30th is a problem for a number of folks.

how about having judges cook with a team and make it a full cook. Since its a trial and error run, recipes and rtechniques will not necessarily be what teams currently do, so anyone/team that may have reservations about shadows can set that aside.. I'd be willing to have 2 judges who never cooked join me.

So, Chuck has an alternative location for us.

It has a couple of small drawbacks, but otherwise sounds great.

1) It's not available on the 7th. The 8th is fine and so is the following week.

2) It's in Bridgehampton. That's a bit far east.

Positives:

1) It's available.

2) It seems that it would be plenty spacious enough.

3) We would have access to a huge kitchen, full bathrooms and other amenities.

It would be at a private school.

First off, a big thanks to Chuck for scoping things out and making this available.

So, what are your thoughts?

Just FYI--
Don't let the term "school" fool ya.
It's not your typical uptight school.
It is more like the kind of school where the teachers supply the beer for the faculty / family school potluck meals.

So as long as we clean up after ourselves, we are pretty free to do...whatever.

And fwiw, it is only about 25 miles east of The Maples.

maybe we can work on something for January/February? I think with enough lead time it could work

Mornin' Wood
12-15-2013, 01:05 PM
I agree, it was very short notice, maybe that was part of the problem...and the holidays don't make it any easier.
January, February, or even very early spring (before comp season really gets going) would be great!

We always talk about the desire to have actual judges give us some feedback on new techniques / flavors but we're afraid to do it at a contest...so this is still a great idea, IMHO.

The venue I have available is good for anytime - winter, spring, etc. Grassy with virtually unlimited space. I personally think it would be a GREAT place for a full contest, and if the Brethren agreed, maybe that would be in the future. It's in a beautiful area, and not too far from the ferry (for the NE teams!).
