Anyone use a deli meat slicer to cut brisket at comps?

Seems like it would work fine, set it for thick slices

I have seen one, but I am pretty new to the competition crowds. Seems like more work to clean up than it is worth. I could see doing it if you are vending, but not to turn in.

I was thinking of the cleanup issue too, I'd prob toss it back in the box and clean it at home

My old Hobart weighs a ton & is a beotch to clean - I'd use a knife :roll:

I know a pretty good team thst uses one. One of those cheap Chef mates. He seems to do alright
