View Full Version : Chicken rub and sauce combo!

Hello Brethren! I am excited to cook in a charity comp in 2 weeks in Overland Park, KS. KCBS rules. I am in charge of chicken and brisket this year. Could you help me out with the latest and winningest combo of rub and sauce for the chicken. Currently I'm using the Pickled Pig method with Rufus Teague's Spicy meat rub and Eat BBQ's Next Big Thang, but was hoping for suggestions to please the judges. Thank you!

Next big thing will do just fine for a sauce. I have never tasted Rufus Teague, so I can't comment on that.

Everglades seasoning bbq rub and blues hog/grills blazing sauce 50/50

Very few use anything straight up, unless they're actually a vendor and sell their own rubs and/or sauces.
Finding that balance is definitely the trick, and what works one weekend may get panned the next. Make sure the chicken moist and tender, and the skin if presented is bite-through thin.

I tried a new one this weekend on two rotisserie chickens you might want to give a shot to. It was pretty awesome. Equal parts Sweet Baby Rays and Eat, 1 tablespoon apple juice, and 2 tablespoons Pineapple Texas Pepper Jelly.

I'm not sure what the best combo is, but I tried Eat's NBT on chicken this weekend and that is some good sauce right there.

I tried all the rufus Teague sauces and I think they are good but honestly don't find them competition worthy . I wont tell you what exactly but I will give you some ideas of sauce you can use
50/50 Golden Toad Chipotle BBQ sauce & Blue Hog Blue
Big Buts Cranberry
Meat Mitch WHOMP
Drapers thinned out some
Slabs Amzing Glaze
I not going to beat around the bush those are some of the best sauce I love ! Reason why 50/50 blues hog blue and red isn't on there is because We have been stepping away for everyones go to sauce and doing pretty good!
On to rubs I have tried all of them trying to pick out the same thing a lot has to do with cooking style for hotnfast like we do I recommend the following
Wild Bunch Butt Burners Rub
Oakridge Secret Weapon
Obieque Sweet Rub
Again these rubs will some what match the sauces but your gonna hafta to eventually try to find out what works for you!
