Hello from Maryland,
I started smoking meat a few years back when I became interested in charcuterie – I love bacon and wanted to make it from scratch. I have an 18 ˝ inch weber smokey mountain cooker (I forget what the acronym for that is!) and I have been a slow learner. After two years, I have finally mastered bacon and smoking a decent pork butt roast. It might be better to say that I figured out how to keep my temperature at 225 to 250 degrees all day.
This weekend I offered to bring brisket to our family gathering and am going to try to get my smoker up to 275. I have a feeling it will be another long learning curve. I’m originally from Massachusetts and I don’t think I even tried barbecue until I was in my 40s.
The only other person I know that “smokes” is my brother-in-law in Atlanta so I really rely on the internet for help!
