I am a die hard car guy turned obsessed BBQer, from the Philadelphia, PA area. Last summer I bought a small Brinkmann split door vertical water smoker (see image below).
http://img4.wfrcdn.com/lf/50/hash/843/7627619/1/Brinkmann-Split-Door-Charcoal-Smoker.jpgOnce I modded it by adding Nomex high heat gasket and a better fire box (basically a Weber vegetable grill pan) the thing works pretty good however you can't fit a lot in it (big time bummer). I've practiced on it several times and have had about 7 or 8 cooks on it with about 5 or 6 true successes. But now that I have the smoking bug I want to upgrade and am considering building a UDS. Based off of everything I've read it seems like an awesome no brainer upgrade from what I currently have, there is just one thing that doesn't make sense to me and that is the fact that everyone says you do not need a diffuser or water pan or anything like that so I am not sure how the smoker works as an indirect cooker. Any way I will continue my research and probably chime in again later.
