I am enrolled in a free course through Coursera titled Science of Gastronomy. As a KCBS judge I find some of the concepts very interesting and I'm often thinking, this would apply to competition bbq. So, I thought I'd share the with my brethren that this course is available. We are in the 3rd week of the course, but you can watch the videos from weeks 1 and 2. Because you miss the start of the course and you won't be graded - probably wouldn't matter anyway. If you are interested, Coursera website is www.coursera.org. After you register you can search for Science of Gastronomy and sign up. Week 1 is titled Energy Transfer and Hunger and Satiety. Week 2 is titled The Sense of Taste and The Sense of Smell. Week 3 is The Sense of Sight and The Sense of Touch. This is a 6 week course so there is more to come.
